This Healthy Ranch Chicken Salad is a huge hit!

At just 350 calories this dish is perfect for a balanced recipe for the new week👌🏻💃🏻🍱☺️⭐️
🥗🍱🍗Ingredients
1 lb Chicken Breast into small pieces
1 Tbsp Olive Oil
4 Cups Greens
¼ Small Red Onion sliced
¾ Cup Cherry tomatoes halved
½ English Cucumber sliced
1 Avocado sliced
⅓ Cup Corn Fresh or canned
1 Cup Plain non-fat Greek yogurt
2-3 Cloves Garlic minced
2 Tsp Lemon Juice
2 Tbsp Onion finely chopped
1 Tbsp Dijon Mustard
2 Tbsp Fresh chives chopped
1 Tbsp Fresh chopped
1 Tbsp Fresh dill finely chopped
Sea salt and pepper

🥰👩🏻🍳Instructions
Start with making the homemade ranch dressing. Add all the ingredients to a small jar, place the lid on, then shake to emulsify.
Pour about 1/3 of the dressing over the chicken and allow it to marinate for at least 15 minutes. Refrigerate the remaining dressing until ready to use.
Next, heat oil in a large non-stick pan, and add in the chicken in a single layer. Cook until golden brown and cooked through about 5-7 minutes.
To assemble the salad, add green to a large bowl. Top with remaining ingredients. Just before serving toss with the dressing and enjoy!

Rosemary Roasted Root Vegetables 🥕🥔🌱

This is such a SIMPLE recipe for dinner and/or meal prep.
Any combination of potatoes and/or yams works really well here!
If you haven't tried roasting parsnips, or fennel, then you are going to be completely hooked after making this recipe!
These veggies stay great in the fridge for up to 5 days in an airtight container.
makes 6 servings
Ingredients:
1 lb. new baby potatoes, or sweet potatoes, or a combination of each, chopped into 1 inch pieces
4 medium carrots, peeled and chopped into 1 inch pieces
2 medium-large parsnips, peeled & chopped into 1 inch pieces
3 small red onions, peeled and quartered
1 large fennel bulb, sliced
2 Tbsps olive oil, or avocado oil
5 sprigs fresh rosemary, chopped
6 cloves fresh garlic, minced
1 tsp sea salt, or to taste
freshly ground black pepper, to taste
Instructions:
Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper.
Add all chopped veggies into a large bowl; add in garlic, rosemary and sea salt.
Drizzle in the oil and toss everything until evenly, and well coated.
Arrange these veggies into a single layer onto your prepared baking sheet and roast for about 25 minutes, flipping and turning vegetables halfway through until beautifully golden, tender, and crispy.
Taste test and adjust salt and pepper according to your personal taste.

Blended Flavors Chopped Salad 🍓🥒🍅
A Super QUICK - yet, totally unique chopped Healthy Salad.

Cucumbers are low in calories and contain a good amount of water and soluble fiber, making them very hydrating and great for weight loss and overall health.
This salad is best enjoyed within a few hours of preparing.
makes about 4 servings
Ingredients:
2 cups strawberries, hulled and halved
1 pint cherry tomatoes, halved
3 garden crisp cucumbers, chopped
1/2 small red onion, thinly sliced
a small handful of fresh mint, leaves picked
a small handful of fresh cilantro, leaves picked
Toppings:
4 Tbsps pine nuts
4 Tbsps crumbled feta cheese
Dressing:
1 Tbsp Dijon mustard
4 Tbsps extra-virgin olive oil
1 Tbsp raw honey
1 fresh garlic clove, minced
1/2 tsp sea salt
1/4 tsp ground pepper
Instructions:
In a small bowl add all dressing ingredients. Whisk really well, until emulsified.
In a medium bowl combine all of your prepped ingredients for the salad.
Drizzle your dressing and gently stir to coat.
Sprinkle with toppings and serve!

📝 Ingredients
* 4 thin boneless skinless chicken breasts
* 2 teaspoons olive oil
* 2 teaspoons chili powder
* salt to taste
* 1 cup diced mango
* 1 cup diced avocado
* the juice of 1 lime
* 1/2 cup minced red bell pepper
* 1/4 cup chopped cilantro
👩🍳 Instructions
1. Heat a grill over medium-high heat. Drizzle the olive oil over the chicken breasts and sprinkle with the chili powder and salt to taste.
2. Grill for 4-5 minutes on each side or until cooked through.
3. While the chicken is cooking, combine the mango, avocado, red bell pepper and cilantro in a bowl. Stir in the lime juice and salt to taste.
4. Spoon the salsa over the chicken and serve.
