We did it! 8km under our belts 🏃🏻‍♀️🏃🏻‍♂️

There was a moment on Friday, feeling totally under the weather that I thought race day might not happen, but I rested for two full days, and yesterday we set off at 8:15am for our 8km run! My body hurts more today than it did through the entirety of training from May until now, maybe I pushed the limits a bit, but I wasn’t about to let myself down by not being there, even if I had had to walk the whole way. At the end of the day, I RAN the entire damned thing in 62 minutes.

Thank you for knowing I needed a challenge to take on, because I always need a goal to work towards. Thanks for being one of my very favourite people, and the best “little” brother a girl could ask for. Thanks for being Thing 2 to my Thing 1 (and for the fun shirt suggestion) ❤️

To the friends and family who supported, sent messages of encouragement, who came down to the race, hugs to you all 🥰

And to my biggest champion of all, my husband and “coach”, the ultramarathoner himself I will never love running as much as you do, but I do love you 💋

Everything Bagel seasoning has so many uses: sprinkle it on eggs, avocado toast, smoked salmon! Want another delicious option? I created this high protein, gluten free everything bagel breakfast bread. A great base for poached eggs, or just eating a slice on its own! Bonus: I slice it, then freeze, and reheat by the slice in the toaster for a beautiful warm, crisp bite!

Unsure what to do with an abundance of fresh tomatoes? Here’s an easy 5-10 minute side dish for your long weekend dinners on the patio, Caprese Salad. Slices of sun ripened tomato, fresh mozzarella, thinly sliced red onion, freshly cracked black pepper and a sprinkle of sea salt. Then drizzle it all with balsamic or red wine vinegar, extra virgin olive oil, and fresh basil leaves (I had fresh pesto in my fridge, so subbed that in instead!) 🍅

A Sunday morning spent meal prepping. High protein almond flour breakfast breads, in 4 different flavour. Jalapeño Cheddar, Sausage & Herb, Zucchini & Herb, and Everything Bagel.

Add some almond & coconut flour based dark chocolate chip cookies into the mix for another high protein and low sugar treat 🍪
