My boys’ lemon 🍋 ricotta pancakes 😍
It was their treat for Mother’s Day and it was soooo good!
Although I was overlooking the whole process and cleaning up after them 🧼 but it felt good 😌
Easy, quick and yummy recipe inspired by
🗒Dry ingredients:
•1.5 cups whole-wheat flour (or all purpose flour)
•2 tsp baking powder
•1/2 tsp sat
•2 tbsp sugar
🖊wet ingredients:
•Juice of 1 lemon 🍋
•zest of 1 lemon
•1 cup milk of choice🥛
•1/2 cup ricotta cheese
Mix dry ingredients
Add wet ingredients
Mix well and pour 1 ladle size into the pan
Cook on medium heat on both sides
Enjoy with your choice of topping 😋 I chose whipped ricotta cheese, maple syrup and nut butter.

A good, hearty laugh relieves physical tension and stress, leaving your muscles relaxed for up to 45 minutes after!
So try to show those pearly whites more often and have a good laugh 😁
A funny show 📺, listening to funny stories, chatting with an old friend 👯♀️ and recalling funny moments are all ways to add these pleasant instances to your self care routine 🥰

A quick healthy and yummy dish... Swiss chard with tahini sauce 🤩 سلق بطحينة
This is a dish I grew up eating that was mainly prepared by my grandma along with many cold mezze varieties for big dinners 😋
Chard is Chard is the definition of a superfood. It contains high amounts of vitamins K, A, C, and E, magnesium, iron, and potassium 💪🏼 and tahini tops all this with iron, antioxidants and vegan protein 🏋️♀️
It is super simple to make and takes less than 1️⃣5️⃣mins:
✏️ingredients:
•2 bunches of Swiss chard (I tried the red one this time) cut and thoroughly washed 🚿
•3 tbsp tahini
•juice of 1 lemon
•2 crushed cloves of garlic 🧄
•3 tbsp water
•salt
♨️Steps:
•Boil some water then add your chard.
•Keep submerging it till it reduces in size, it needs just few mins for the stand to soften (around 5-7 mins)
•drain out of the hot water and place in a mesh strainer to cool
‼️don’t throw away the water, use it in your smoothies, soups or as a base for your veggie stock
•mix the tahini with water, salt, garlic to a smooth consistency
•add lemon 🍋 juice
•squeeze the excess water from the chard then add it in
•mix and serve
We enjoy it cold with Arabic pita bread 🫓👌🏼

My favorite grounding recipe:
Roasted root vegetables 🍠🥔🧄🧅
I always felt a great energy and satisfaction from this dish but never knew why exactly UNTIL I heard about Grounding Food 😌
It is an ancient belief that all foods offer unique energy ☯️ properties and in turn affect our bodies in different ways.
This is a perfect recipe when you’re feeling low on energy, drained and lacking focus especially during fall and winter time ☔️
Seasonal is always your key! 🤩
📝Use any seasonal root veggies in your area, I used:
🍠sweet potatoes
🍠yellow and purple potatoes
🍠parsnip
🍠rutabaga
🍠Celeriac (celery root)
🍠Jerusalem artichokes
🍠shallots and garlics
Cut everything in wedges or cubes, sprinkle salt, pepper and some dried herbs.
Toss with a little oil and bake in a baking sheet on 380 F oven for 40 mins flipping half way through ♨️
Enjoy as a side dish with a drizzle of lemon 🍋 or accompanied with a fresh green salad 🥗
(I personally like to dip it in homemade Hummus 😋)

Can jam be prepared in 10 mins???? YES! 🙌🏼
Chia Berries Jam🍒🫐🍓
Only 3️⃣ingredients:
🍓2 cups organic mixed berries (frozen or fresh)
🫐2 tbsp chia seeds
🍯2 tbsp raw honey
A little orange 🍊 zest (optional)
▫️Put all ingredients in a small casserole.
▫️Bring to a simmer on medium heat
▫️Stir from time to time.
▫️Simmer until thick and smooth (around 10 mins)
▫️Wait for it to cool and store in an airtight container - in the fridge.
And voilà!!
Your fruity goodness spread in ready!
Enjoy with your pancakes 🥞 or on a peanut butter and jam toast 🍞
