Coconut Chia Overnight Oats with toasted almond + caramelized banana
Ommggg this combo is EVERYTHING. I love overnight oats a) because how easy they are and b) they are sooo filling and nutritious. Great way to start the day!
Serves 1 | V • GF • DF
1/2 cup large flake rolled oats
1/2 tbsp chia seeds
1 tbsp fine shredded coconut
Other Optional add ins: 1/2 tbsp h**p and ground flax seeds
1-2 tsp maple syrup
2/3 cup dairy-free milk of choice (I use almond)
Toppings:
Caramalized banana
Toasted almonds
Maple syrup
Cacao Nibs
To make:
1. In a mass jar or airtight container, add oats, chia seeds and coconut. Stir until fully combined.
2. Measure out milk and add maple syrup. Mix until combined. Add to the oat mixture and shake vigorously in container to combined and avoid chia seeds from sticking to the bottom.
3. Place in the fridge and let sit overnight!
4. Toast almonds in a pan over low heat or in the oven at 325 F, until golden brown.
5. Caramalized banana in a pan over med-high heat, until both sides are browned.

you’ve seen other people achieve their goals, why do you feel like you can’t? it takes time and consistency and sometimes failure to achieve what you want. it’s okay to fail, but remember it’s about what you do after you fall that counts the most.

things like having more energy, feeling better, being healthier, feeling good in your clothes - whatever it is, write it down.
recognize your self-sabotaging habits
to break the cycle you need to become aware of your behaviour. things like procrastination, negative self-talk and perfectionism are all things habits to be aware of.
take time to self-reflect
taking time to dig deeper and look inside at your underlying motivations. successful people take time to think through their choices, decisions of actions.
change your negative behaviour
every action we take either moves us towards or away from the person you want to be in life. consider the actions you’re taking and the thoughts that are holding you back. look for ways to replace old patterns with new ones that help you not hinder you.
start with small meaningful changes
like everything in life, it’s important to set small goals and not take a giant leaps all at one. take a step back and look for one small, meaningful change that you can make that will give you that boost you need to keep going.

Creamy Corn Pasta 🌽
A cream-free creamy Summer dish that you’re not going to want to share. If you love corn as much as I do you’re going to be obsessed with this dish! I use lentil pasta to make this dish gluten-free and packed with protein. Use whatever pasta is your fave. Check out the recipe below
Serves: 3-4
INGREDIENTS
12 oz dried pasta
1 Tbsp olive oil or butter
2-3 scallions, trimmed and thinly sliced
2 ears of corn, cooked and kernels removed
1/4 tsp red pepper flakes
Salt and pepper, to taste
Optional add-ins: 1/2 cup grated parmesan or Romano, 1/3 cup chopped basil or parsley
Fresh lemon juice
WHAT TO DO
1. Boil your corn until cooked and slice kernels off the cob once cooled.
2. Bring a large pot of well-salted water to a boil. Cook pasta according to the package directions.
3. Meanwhile, heat oil or butter in large sauté pan over medium heat. Add scallion whites and a pinch of salt and cook for 2-3 minutes, until soft. Add all of the corn, except for 1/4 cup. Saute for another 1-2 minutes, until warmed.
4. Transfer to a blender, and purée mixture with 1/4 cup of water. Add a little extra water if needed to get a thick but easy to pour consistency.
5. Heat the same skillet over medium heat. Add the corn purée and cook for 30 seconds to heat, season with salt, pepper and red chilli flakes. Add reserved 1/4 cup corn and reduce heat to medium. \
6. Add pasta tossing to coat. Add pasta water if sauce is too thick. Cook for 1 minute. Stir in 1/4 cup of the scallion greens, 1/4 cup parmesan and more seasoning if needed. Sprinkle with fresh lemon juice to taste.
7. Transfer to a pasta bowl and garnish with more scallions, parmesan and black pepper.
