Post-run Matchacado (i.e. Matcha Avocado) Smoothie made with
- 1/3 avocado π₯
- 1 tsp matcha
- 1 frozen banana
- 2 big handfuls of spinach
- 1/4 C coconut yogurt
- 1/4 C almond milk
- 1/4 C coconut water
- 2 TBS GF oats
- a bit of ice

Ringing in 2019 with a return to posting on GNourish! Starting off with these GLUTEN FREE PUMPKIN PANCAKES that I made on Christmas day for my fam π₯
Pancakes (Makes 10-12):
π± 1/2 C pumpkin puree π± 1 banana π± 2 eggs π± 1 Tbs maple syrup π± 1 tsp all spiceπ± 1 tsp cinnamon π± 1/2 tsp ground ginger π± 1/2 tsp nutmeg π± 1/2 tsp ground cloves π± 1 tsp vanilla extract π± 2 C almond milk π± 1 C gluten free oat flour (or grind whole oats) π± 1/4 C coconut flour
Blueberry sauce:
1 C frozen or fresh bluebs π± 1 tsp vanilla extract π± 1/2 tsp cardamom. Cook over stove until blueberries are tender
Cinnamon almond butter sauce:
2 Tbs almond butter π± 1 tsp cinnamon π± 1 tsp maple syrup π± 3 Tbs water or almond milk. Mix all ingreduents until well combined, and add more liquid to make sauce a smoother/more runny consistency

Pumpkin Spice Saturdays βπ
- 1 C almond milk
- 1 C brewed coffee
- 2 Tbs pumpkin puree
- 1 tsp vanilla extract
- 1 tsp maple syrup
- 1 tsp cinnamon
- 1/2 tsp all spice
- 1/2 tsp ginger
- pinch of nutmeg
- pinch of salt
Add all ingredients to blender and blitz until frothy

Meal prep Mondays (except I actually made this on Sunday) π
- 3 Bean Corn and Kale salad featuring chickpeas, black beans, red kidney beans, red & yellow bell peppers, corn, lightly sauteed onion, garlic, and kale, salt & pepper, cumin, some avocado oil, and a squeeze of lime
- Cinnamon roasted sweet potatoes
- Red and white quinoa

Pumpkin Pie Oats ππ
I was really craving a warm carb-filled breaky after my run yesterday, so with it being fall I made this cozy bowl of oatmeal
- 1/2 C GF oats
- 1/4 C pumpkin puree
- 1/2 C almond milk
- 1/2 mashed banana
- 1/2 tsp allspice
- 1 tsp cinnamon
-1/4 tsp nutmeg
- 1/2 tsp ginger
- 1 tsp almond butter
- 1/2 tsp vanilla extract
- 1/2 tsp maple syrup
- Topped with: 2 tsp peanut butter, 1/2 banana, a sprinkle of cinnamon

Happy Fri-yay!
Here's a recipe for a Bean Medley Curry Stew that I made a couple weeks ago. It's very warming and perfect for the chilly Fall weather this time of year ππ The flavours are inspired by an Ital Stew I had at a Jamaican restaurant, so it was a bit of an experiment creating this. Hope you all enjoy π - 3 large tomatoes
- 1 onion - 3 cloves of garlic - 2 large celery stalks
- 1 yellow poatoto
- 2 medium carrots
- 3 cups of spinach
- 1 TBS avocado oil - 1 TBS tamari (or soy sauce)
- 1 tin of 3 bean medley (pinto, red kidney, brown-eyed beans)
- 1 tin of chickpeas - 1 C water
- a few leaves of fresh sage
- a couple sprigs of thyme
- a few bay leaves
- 1 TBS cumin
- 1 TBS ground coriander seeds
- 1 TBS curry powder - 1 C full-fat coconut milk
