Flo’s Tuna, Black Bean and Chickpea Salad
A quick, delicious, and easy-to-make dish.
Ingredients:
• 1 cup tuna (solid pack in water, drained)
• 1 cup black beans, rinsed and drained
• 1 cup chickpeas, rinsed and drained
• 1 cup avocado, diced
• ½ cup red onion, chopped
• ½ cup celery, chopped
• ½ cup carrots, shredded
• ¼ cup fresh parsley, chopped
• ¼ cup olive oil
• ¼ cup lemon juice
• Salt and pepper, to taste
Instructions:
1. In a large bowl, combine all ingredients.
2. Gently toss until well mixed.
3. Cover and refrigerate for at least one hour before serving to enhance flavors.
Serve and enjoy your fresh, flavorful tuna salad!
