For the fourth day, continuing our fruitful partnership, we are proceeding with our training journey with the IKEA team on Good Manufacturing Practices (GMP).

أولا : الجودة تبدأ من الحقل (الحصاد والنقل)
الهدف: ضمان قطف الثمار في قمة جودتها وتقليل الفاقد الأولي.
• اولا (نظري):
o فسيولوجيا ثمار العنب ولماذا هي حساسة؟
o تحديد معايير الحصاد (اللون، الحجم، السكر $TSS$).
o الأدوات المستخدمة وتطهيرها.
• ثانيا (عملي في المزرعة):
o طريقة الإمساك بالعنقود الصحيحة (حماية الطبقة الشمعية).
o التدريب على استخدام "الرفراكتوميتر".
o طرق رص الصناديق في الغطاء الحقلي.
• الثالثة (لوجستيات):
o إدارة "حرارة الحقل" وأهمية النقل السريع.
o حماية المحصول أثناء النقل للمحطة.
ثانيا : عمليات محطة التعبئة (الفنية والرقابية)
الهدف: تحويل المحصول إلى منتج مطابق للمواصفات الدولية.
• الجلسة الأولى (الفرز والتدريج):
o معايير القبول والرفض (Defects).
o فنيات تنظيف العنقود (Trimming) دون تشويهه.
o تصنيف الأحجام (Extra, Class I, Class II).
• الجلسة الثانية (التعبئة والتغليف):
o أنواع العبوات (أكياس، صناديق بلاستيكية، كرتون).
o التعامل مع وسادات ثاني أكسيد الكبريت ($SO_2$ Pads) - الكميات والمخاطر.
o وضع الملصقات (Labeling) وتتبع المصدر (Traceability).
• الجلسة الثالثة (سلامة الغذاء):
o النظافة الشخصية (GHP).
o التعامل مع الكيماويات والمواد الملامسة للغذاء.
ثالثا : إدارة البرودة والشحن الدولي
الهدف: الحفاظ على "نضارة" العنب حتى وصوله للمستهلك النهائي.
• الجلسة الأولى (التبريد الأولي - Pre-cooling):
o تكنولوجيا التبريد بالهواء المرغم (Forced Air).
o منحنيات خفض الحرارة وأهمية الوصول لدرجة صفر مئوي.
• الجلسة الثانية (التخزين والشحن):
o إدارة المخازن المبردة والرطوبة النسبية.
o طريقة التحميل الصحيحة داخل الحاوية (Airflow).
o قراءة بيانات أجهزة تتبع الحرارة (Data Loggers).
• الجلسة الختامية:
o اختبار عملي للمتدربين.
o توزيع الشهادات ومناقشة التحديات الميدانية.
