Keeping it light for breakfast today with brown seeded toast, with peaches and blueberries topped with Greek yoghurt.

Finally came across ketchup and decided to break the fast today with a drizzle over some fluffy scrambled eggs with turkey sausage and seeded toast đđ˝ really good.

Silly me didn't read the ingredients on my pre-made cajun spice which apparently contains wheat, so we had to improvise a little and this Cajun-ish lazy chicken thigh dish with fennel and lime brown rice is what came out of it and I'm really happy with it đ
Season to taste but this is what I did for 5 boneless chicken thighs:
- Pinches of salt, black pepper, mixed spice, and ground cumin
- 1 tsp of very lazy chopped red chillies
- Half a tsp of garlic powder
- Half a tsp of thyme
- 2 tsp of smoked paprika
- About a quarter tsp of ginger powder
Set to one side and start to cook your rice, adding some whole fennel seeds, a bit of oil, and some salt. When your rice is about half way done, start to cook your chicken on a high heat making sure each side starts to char. I used olive oil as that helps with browning. This can take around 10 minutes. Press them down a little (ideally with a fork as you should have washed your hands by now!) while they cook to make sure they're fully cooked through and to help with charring.
When you're happy with both sides, remove from the pan and add in your cooked rice and if you want to some mixed veg. Mix well to take up some of the flavour from the chicken and squeeze in some fresh lime juice. Leave to cook for around 5 minutes before adding the chicken back into the pan to retain warmth and serve.

Took a much needed break from things for a trip to North Yorkshire. It can be difficult to pull ourselves away from everyday life, especially within the last few months with life stressors ramped up and the battle to keep all of those balls in the air. Some of us suffer with guilt when we take the time to step away and take care of ourselves. I myself find it difficult to switch off and appreciate my surroundings.
Taking time for relaxation and rest, and allowing ourselves to focus our energies elsewhere from time to time is really important for our mental and physical health, and goes a long way in providing clarity, increasing energy, and enhancing motivation; while making lovely new memories

New Yearâs Resolutions. We love to make them, we love to get excited, we love that initial rush of motivation, and we love talking about them. But how much effort do we typically put into making them a reality?
New Yearâs Resolutions potentially date back to the 17th century, when people would make promises to the Godâs in hope of good fortune in the New Year. Since then, resolutions have evolved to be more about personal growth, and we do them as a way to encourage ourselves to make positive changes in the year that follows. But this is just the fourth step in the lengthy transitional phase thatâs needed to facilitate realistic long-term change.

How we treat our bodies can be key to better mental health.Â
A cleanse is a good way for anyone to start the new year; especially someone wanting to change their lifestyle to a cleaner way of living for 2022. Every year after a huge meal when I say I couldnât eat anything else, I still manage to find room for silly amounts of chocolate, sweets, and crisps. Like a lot of people, I tend to let the good eating habits slide just a bit too much.Â
So, this year I wanted to try something different. I still get my chocolate, but get to do things in a healthier way. With everything thatâs happening at the moment; all of the uncertainty, isolation and worry, it would be easy to turn to unhealthy foods for comfort, but remembering that theyâll only be a fleeting distraction is key, and create problems or add to existing issues. Here I managed to have my chocolate, but in a healthier way.
Keep up your health goals during this holiday season and go into a New Year in better health.
