Nutrient-dense doesn’t necessarily mean nutritionally complete. 🥣
This soup is packed with squash, kale, cannellini beans, shallots, spices, Parmesan and nutritional yeast, so it provides plenty of fibre, vegetables and micronutrients.
But it is fairly low in protein and overall calories, so for many it won’t keep you full for long (likewise if you were to only have a sandwich and no soup).
There’s protein in the beans, cheese and yeast, but not much.
So I added an egg sandwich: boiled eggs mashed with mustard on 2 slices of malted bread. 🥚🥪
Healthy eating isn’t just about adding vegetables. It’s also about getting enough protein, energy and fibre to make a meal satisfying and nutritionally adequate for you.
Sometimes you don’t need to change the healthy food you already have — you simply need to add to it.
