Satay beef fillet with fresh watercress and cucumber
INGREDIENTS
1/4 cup (60ml) peanut oil
2 long red chillies, seeds removed, finely chopped
3 garlic cloves, finely chopped
600g centre-cut beef eye fillet
2 Asian (red) eschalots, finely chopped
2 teaspoons grated ginger
1 1/2 tablespoons light soy sauce
1 cup (250ml) coconut milk
1 tablespoon caster sugar
1/3 cup (95g) crunchy peanut butter
1 bunch watercress, leaves picked
2 Lebanese cucumbers, halved, sliced lengthways into thin wedges
Coriander leaves, to serve
METHOD
1.Combine 2 tablespoons oil, half the chilli and one-third of the garlic in a bowl and brush over the beef. Season, then set aside at room temperature for 30 minutes.
2.Meanwhile, heat remaining 1 tablespoon oil in a saucepan over medium heat. Add eschalot and cook, stirring, for 3 minutes or until softened but not browned. Add ginger and remaining garlic, and cook for a further 1 minute or until fragrant. Add soy sauce, coconut milk and sugar, stirring until sugar dissolves, then bring to a simmer and cook for 1 minute or until slightly reduced and thickened. Add peanut butter and stir until melted and combined. Set aside.
3.Preheat a barbecue or chargrill pan to high. Cook beef, turning, for 10-12 minutes until lightly charred but rare in the centre, or until cooked to your liking. Rest, loosely covered with foil, for 5 minutes.
4.Meanwhile, gently reheat peanut sauce over low heat. Thinly slice beef and arrange on a serving plate with watercress and cucumber wedges. Drizzle over spoonfuls of peanut sauce, and serve scattered with coriander leaves

After a very turbulent couple of years, and still ongoing for some, now is the time to look after yourselves. A lot of importance has been placed on being active, and rightly so, but to really help the body and mind, there is no better way to achieve this than to give yourself a treat. After the delicious dish on the last post showing that a plate of food doesn't need to be complicated, this month is about macronutrients. Macronutrients are the staple of your plate of food. In basic terms, macronutrients are protein, carbs and fats, and these make up every plate of food we consume.
First thing to remember is....carbs are not the enemy! It is an essential food group. Unfortunately there are lots and lots of very yummy carbs that won't help the waistline or day to day activity and performing any sort of fitness/sport. Look for complex carbs and grains.
Below are some examples of macronutrients and can be used in many different combinations, just be careful of portion size!

What we consume is regarded as the hardest part to get right in any health and fitness journey. This doesn't need to be the case! Too much pressure is put onto what we eat when things need to be kept simple. There is too much emphasis on convenience in today's society when a little bit of time and thought is all that's needed. People should be turning to a variety of whole foods and eating lots of fruits & vegetables, while restricting intake of fat and sodium.
Below is our first dish - very simple but looks delicious - lemon salmon & pasta. You can use your choice of veg, thinly sliced with tagliatelle and salmon cooked with lemon and pepper. This covers the main food groups of protein, omega 3's good fats and carbs, creating a light and fresh dish.
