Just shy of 10 years and Seahorse has returned to St John. US border is super chill and easy for citizens. We used the CBP AP. Seahorse and crew were approved, and we anchored and came into the office only to be told not needed....wow have times changed.

Quiet before the north wind blows. Seahorse is motoring north in the Red Sea. We have a very narrow window to make it to our next anchorage. Marsa Alam Egypt. Making a batch of Lamb Keema Samosas. I found the Samosa leaves which makes it "easier".

Jeff is singing on the back of the boat. And we are about to enjoy Holi at the local Indian restaurant. Tomorrow we leave the Maldives for Djibouti. over 2000 miles - with little to no wind. It is going to be a long passage.

Menu for Phuket, Thailand to Port Galle Sri Lanka Passage

Day #1
Breakfast - Huevos Rancheros - a Seahorse tradition to start the journey, and the captains favorite.
Lunch - Summer Rolls with shrimp from Rawai beach. They were live when we bought them.
Dinner - Chicken Soup - Jeff's infamous homemade cure-all, and a great dinner to start the passage. Homemade biscuits.

Day #2
Lunch - Chicken and Dumplings. Made from the leftover soup.
Dinner - Jump-up Salad bar. One of the many menu items that does not have a recipe, but is a fan favorite because everyone can have what they like.

Premade items for the journey - Cornish Pasties, Split pea soup, PB cookies (gone by the end of day #2), Oatmeal cookies

Day #3
Lunch - BLT and Chips. Jeffs make sure the bacon has a really nice crunch.
Dinner - Crab Quiche and roasted carrot salad. Crab fresh and live form Rawai beach.

Day #4
L - Split pea soup - Jeffs homemade. (premade)
D - Cornish Pasties (premade)

Day #5
L - Bahn Xeo Vietnamese Pancake with shrimp
D - Tuna Noodle casserole (and made extra) and watermelon, mint, feta salad wit lemon vinaigrette.

Day #6
L- Tuna noodle casserole
D - Goulash

Day #7
L- Teriyaki Chicken Bento box
D - Cornish pasties (premade) and gusts to 29kt, and 12ft seas

Day #8 Arrival Day
L - Leftover Jump-up.
D - At Anchor Cocktails with brie, crackers, apples, and sausage roll
Steak and Baked potato dinner.
