It's hard not to notice the vibrant red berries of the Rowan Tree when your out and about.

The Rowan or Mountain Ash is one of my favourite trees. You can make a lovely Rowan berry jelly from its ripe berries.

I decided to put a little twist on it, though, and made a sweet chilli and garlic Rowan berry jelly!
Delicious with cheese and crackers.

Some of the jars might even last long enough to make it into some foody Christmas presents! 😋

The best way to start your day!

Sitting on top of the highest peak in Donegal, enjoying a warm drink, while most people are still tucked up in bed, waiting on the sun to break through on a misty and atmospheric Errigal!

A proper homegrown dinner this evening! Everything in the pan was planted, grown, and harvested here!

Potatoes, garlic, onions, coriander, squash courgettes, and some gortahork cabbage!

All cooked up together with just a bit of butter! 😋

We won't be feeding ourselves through the winter, it was just a little harvest, but not a bad start!

With the passing of the Autumn Equinox, the daylight hours are getting shorter, and the weather turning colder, it's time to use some of nature's goodness to help boost the immune system!

I got a great harvest of Elderberries this year, and now we're well stocked up with Elderberry Elixir!

And I've also got a big jar of fire c***r maturing that'll be ready in time for winter!

What better way for the Eramus+ students to get to know one another.

Students from Belguim, Spain, and Ireland together in the woods on a bushcraft challenge.

Putting up a shelter, getting a campfire going safely, and then sitting together around the fire, eating, and chatting.
