Zucchini Fritters - Grate one medium sized zucchini in a large bowl. Add 1 tablespoon salt to it and set it aside for 15-20 mins for the zucchini to sweat.

Meanwhile prep the other ingredients. Crack an egg in a fresh bowl. Whisk it nicely. Add 1 small chopped onion, some chopped coriander, green chillies, 1-2 cloves of grated garlic, 1 tablespoon oats four and 1 tablespoon bread crumbs* to it. (If you don’t have bread crumbs, you can add powdered nutrela chunks in place of it.) Then add your spices like salt, red and black pepper and some chilli flakes.

After 20 mins, squeeze all the water out of zucchini and transfer into your egg mixture. Mix the zucchini completely with the egg mixture. You’ll have a slightly loose mix.

On a non stick tawa, add a little ghee. With the help of your hands, scoop out little portions of the mixture and place them on the tawa. Shape them like you would shape a tikki. Let them cook on 1 side for 6-7 mins. Then using a spatula fip them and cook on the other side for another 6-7 mins. Cook until they’re golden brown on each side.

Enjoy these hot fritters with a side of green chutney!
