VEGAN SOUTHWEST ROLL REIPES
Ingredients:
Rice paper wraps
1 can of black beans, drained and rinsed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 avocado, sliced
1 small red onion, thinly sliced
1/2 cup of corn kernels
1/4 cup of chopped fresh cilantro
1 tsp of chili powder
1/2 tsp of smoked paprika
1/4 tsp of cumin
1 lime, juiced
Salt and pepper to taste
Instructions:
Begin by preparing the filling. In a large mixing bowl, combine the black beans, red and yellow bell peppers, sliced avocado, red onion, and corn kernels.
In a separate small bowl, mix together the chili powder, smoked paprika, cumin, and a pinch of salt and pepper.
Pour the spice mixture over the vegetables and toss until they are evenly coated.
Add the chopped cilantro and lime juice to the mixing bowl and stir well.
Fill a large bowl with warm water and prepare a clean, flat surface for rolling the wraps.
Dip one rice paper wrap into the warm water for 10-15 seconds, or until it becomes pliable.
Place the damp rice paper onto the flat surface and fill the center with 2-3 spoonfuls of the vegetable filling.
Roll the wrap tightly, tucking in the sides as you go.
Repeat this process with the remaining rice paper wraps and filling.
Serve the rolls with your favorite dipping sauce, such as salsa, guacamole, or hot sauce.
