This healthy vegan dish is highly nutritious and easy to make, making it an excellent choice for a hearty plant based dinner
๐ฒCook the rice according to instructions on packaging.
๐ฒHeat a large pot over medium high heat and sautรฉ the sundried tomatoes and garlic for 2-3 minutes. Add in the smoked paprika, season to taste with salt and pepper and mix well to combine. If necessary, add a splash of water to prevent the tomatoes from burning.
๐ฒNow add the drained cannellini beans, chopped tomatoes, maple syrup and simmer for a further 10 minutes.
๐ฒTo serve, divide the rice, lambs lettuce and bean stew between 4 plates and top with a tablespoon of yogurt. Finish with some black pepper and serve immediately.

Learn how to prepare a fun, colourful and vegan classic Hawaiian dish, perfect for the summertime!
๐Place the tamari sauce, rice vinegar, sesame oil, lime juice, maple syrup, green onions, ginger, sesame seeds and chili flakes into a bowl and mix well to form a marinade. Pour the marinade over the chopped watermelon and set aside to marinate for 1 hour in the refrigerator.
๐In a small bowl, combine the yogurt and sriracha sauce and place in the refrigerator until ready to assemble.
๐Once the watermelon has marinated, assemble your poke bowl. Divide the cooked rice between 2 bowls. Top with the watermelon, cucumber, avocado, edamame beans, nori, and sriracha yogurt sauce. Garnish with black sesame seeds and serve immediately.
