When you see a chocolate label that says “single origin”, does it mean it’s “atas” (premium), tastes good, and high-quality?

Well… not necessarily.

The simplest explanation for single origin is that the chocolates are made with cacao beans sourced from a specific place (origin). It can mean the cacao beans came from a specific region, place, or farm.

Doesn’t sound so special, right?

Actually it is, because most chocolates you find on supermarket shelves are made with a blend of beans from various origins across the globe.

About 20+ years ago, artisan chocolate makers started making chocolate bars using single origin beans to focus on the terroir of the specific bean.

It’s like how wines from different estates taste differently. It’s the same for single origin chocolates. For example, cacao Madagascar often tastes fruity, whereas cacao from Venezuela has a nuttier profile.

PS:
Single origin doesn’t mean that the chocolate is being made in the country where the beans are sourced.

But won’t it be fantastic if the chocolates are made locally, and sourced locally?

Ever seen this white layer on chocolate?
Don’t throw it away just yet.

It may look dusty, streaky, or slightly pale — but it’s not what you think.

This is called fat bloom.
And no, it’s not mold.
It’s not spoiled chocolate either.

It happens when cocoa butter shifts and rises to the surface —usually due to temperature changes, like heat, cooling, or moving in and out of the fridge.

While it may slightly affect the appearance and texture, the chocolate is still perfectly safe to enjoy.

In fact, it’s a natural sign of real chocolate made with real cocoa butter — without artificial stabilisers.

✨ For best quality, store your chocolate in a cool, stable environment (around 18–20°C).

Because good chocolate deserves a little care.

Can chocolates expire? It depends…

It depends if it contains ingredients that have a short shelf life and storage conditions. Proper storage is key in preventing chocolates from going bad.

Generally speaking… Assuming it’s a plain high quality dark chocolate without any additives like nuts… it can last up to 2 years, sometimes more with proper storage conditions.

Even milk chocolates can last up to a year under proper storage conditions because milk powder has a pretty good shelf life - unless it’s exposed to heat and water.

Then you’ll be wondering why chocolates have a “Best By” or “Enjoy Before” date?

That’s really a date to best enjoy your chocolates. It’s when it tastes the yummiest.

Chocolates are also naturally sensitive to moisture and temperature fluctuations. So the longer we keep it without proper storage, the more likely it will look less appetizing.

But it doesn’t mean it has gone bad. It’s just a phenomenon called “bloom”.

How old is chocolate? 100 years old?

Chocolate is actually 4000 years old. It all began in ancient Mesoamerica (what we call Mexico today).

This was where the first cacao plants were found and, The Olmec, one of the earliest civilizations in Latin America, was the first to turn cacao beans into chocolate.

They drank chocolate (not hot chocolate btw) during rituals and used it as medicine.

It is only centuries later, the Mayans and the Aztecs adopted it into their culture.

So if someone tells you that you’re into a new trend of enjoying chocolate, tell them that it is a 4000 year old trend.

If you haven’t seen a cacao tree before, here’s what it looks like. It’s pretty unique.

The tree has been cultivated for centuries by the Maya, and over time, spread across the globe - including Malaysia. Yes, we do have cacao farms!

Cacao trees thrive in hot and humid climates, so the equator is perfect to cultivate cacao. It can live up to 100 years old and bears fruit for about 25-30 years.

What’s unique about this tree is that the fruit (cacao pods) grows directly from its trunk or large branches. They are also tiny.

Although a cacao tree flowers all year round, it is estimated that only 1 in about 500 flowers will turn into a pod.

Growing cacao is hard work and very labour intensive, as caring for and harvesting the pods requires close and constant attention.

Harvesting the pods is also a continuous process because they ripen at different times throughout the season.

Once the pods ripens, each egg-shaped cacao pod contains about 20-40 cocoa beans, which are covered in a sweet white pulp.

Cacao beans are then extracted from the pods and then the journey of chocolate making begins.
