Slow-Cooker Cheesy White Lasagna😋
Ingredients
1 pound ground chicken or beef
2 teaspoons canola oil
1-3/4 cups sliced fresh mushrooms
1 medium onion, chopped
2 medium carrots, chopped
2 garlic cloves, minced
2 teaspoons Italian seasoning
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup white wine or chicken broth
1 cup half-and-half cream
4 ounces cream cheese, softened
1 cup shredded white cheddar cheese
1 cup shredded Gouda cheese
1 large egg, beaten
1-1/2 cups 2% cottage cheese
1/4 cup minced fresh basil or 4 teaspoons dried basil
9 no-cook lasagna noodles
4 cups shredded part-skim mozzarella cheese
Additional minced fresh basil, optional
Directions
1. Fold two 18-in. square pieces of heavy-duty foil into thirds. Crisscross strips and place on bottom and up sides of a 6-qt. slow cooker. Coat strips with cooking spray.
3. In a 6-qt. stockpot, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Set chicken aside.
4. In same pot, heat oil over medium-high heat. Add mushrooms, onion and carrots; cook and stir just until tender, 6-8 minutes. Add garlic, Italian seasoning, salt and pepper; cook 1 minute longer. Stir in wine. Bring to a boil; cook until liquid is reduced by half, 4-5 minutes. Stir in cream, cream cheese, cheddar and Gouda cheeses. Return chicken to pot. In a large bowl, combine egg, cottage cheese and basil.
4. Spread 1 cup meat mixture into slow cooker. Layer with 3 noodles (breaking noodles as necessary to fit), 1 cup meat mixture, 1/2 cup cottage cheese mixture and 1 cup mozzarella cheese. Repeat layers twice. Top with remaining meat mixture and cheese. Cook, covered, on low until noodles are tender, 3-4 hours. Remove slow cooker insert and let stand 30 minutes. If desired, sprinkle with additional basil.

Pressure-Cooker Mexican Stuffed Peppers😍
Ingredients
2 medium sweet red, orange and/or yellow peppers
1 large egg, beaten
1/2 cup crushed tortilla chips
1/2 cup salsa
1/4 cup finely chopped onion
2 tablespoons minced fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon seeded and finely chopped red chili pepper
1/4 teaspoon minced garlic
1/4 pound lean ground beef (90% lean)
1/4 cup shredded Mexican cheese blend
Sour cream
Directions
1) Place trivet insert and 1 cup water in a 3- or 6-qt. electric pressure cooker.
2) Cut and discard tops from peppers; remove seeds. In a small bowl, combine egg, chips, salsa, onion, cilantro, cumin, chili pepper and garlic. Crumble beef over mixture and mix lightly but thoroughly; spoon into peppers. Set peppers on trivet.
3) Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 12 minutes. Allow pressure to release naturally. Sprinkle peppers with cheese. Serve with sour cream and, if desired, additional salsa.

Taco Puffs
Ingredients
1 pound ground beef
1/2 cup chopped onion
1 envelope taco seasoning
2 tubes (16.3 ounces each) large refrigerated flaky biscuits
2 cups shredded cheddar cheese
Directions
1) Preheat oven to 400°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink, 5-7 minutes, breaking into crumbles; drain. Add taco seasoning and prepare according to package directions. Cool slightly.
2) Flatten half the biscuits into 4-in. circles; arrange on greased 15x10x1-in. baking pans. Spoon 1/4 cup meat mixture onto each circle; sprinkle each with 1/4 cup cheese. Flatten remaining biscuits; place over filling and pinch edges to seal tightly.
3) Bake until golden brown, 12-15 minutes.
4) Freeze option: Freeze cooled pastries in an airtight container. To use, microwave pastry on high on a microwave-safe plate until heated through.

Cobb Salad Sub
Ingredients
1 loaf (1 pound) unsliced Italian bread
1/2 cup balsamic vinaigrette or dressing of your choice
5 ounces fresh baby spinach (about 6 cups)
1-1/2 pounds sliced deli ham
4 hard-boiled large eggs, finely chopped
8 bacon strips, cooked and crumbled
1/2 cup crumbled Gorgonzola cheese
1 cup cherry tomatoes, chopped
Directions
1) Cut loaf of bread in half lengthwise; hollow out top and bottom, leaving a 3/4-in. shell (discard removed bread or save for another use). Brush vinaigrette over bread halves. Layer spinach, ham, eggs, bacon, cheese and tomatoes on bread bottom. Replace top. Cut loaf in half lengthwise from top to bottom; cut crosswise 5 times to make 12 pieces.

Peanut Sweet Potato Stew😍
Ingredients
1 can (28 ounces) diced tomatoes, undrained
1 cup fresh cilantro leaves
1/2 cup chunky peanut butter
3 garlic cloves, halved
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon smoked paprika
3 pounds sweet potatoes (about 6 medium), peeled and cut into 1-inch pieces
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 cup water
8 cups chopped fresh kale
Optional: Chopped peanuts and additional cilantro leaves
Direction:
1) Place the first 8 ingredients in a food processor; process until pureed. Transfer to a 5-qt. slow cooker; stir in sweet potatoes, beans and water.
2) Cook, covered, on low 6-8 hours or until potatoes are tender, adding kale during the last 30 minutes. If desired, top each serving with chopped peanuts and additional cilantro.
