Twin Spruce Farm, located in Accord, NY, is a beautiful working farm with cattle, chickens and a few horses. It is our place we go to relax and try to get back to a more simpler life on the weekends.

With Kids and all the events that go along with them, we are not getting up to the farm as much as we would like. Twin Spruce Farm is now available to rent so other can enjoy.

Alamar Equine

Check out some basic fundamental work by Cliff and Candice from Alamar Equine. These two make an interesting team. There is no english or western, just sound horsemanship. Follow Alamar for more videos and tips.

In this video Candice’s and I are working with a young horse that gets pretty tight and touchy when he feels off balance especially when asked to just move his shoulders or hips, this is a fairly common issue for young horses to have so we use this exercise quite a bit to help them find a comfortable balance point. When we show a horse that we know where his feet are and we also show him that we can control those feet the horse will gradually grow In His trust of what we ask of him. This is the first time we have done this with this youngster and you can see as the video progresses how his body softens as foes his overall expression. We work horses as a team like this to help the horse understand what we want and to give him support as we do it. This exercise is used on both the young horses as well as older horses who have become dull or cranky. Our objective is to teach our horse to yield his hips and shoulders with a soft feel, by having someone flag the horse as we go it allows the rider to be more quiet and just guide the horse as the flagger creates the energy.

This week's "Profile of a Penner" is Mr. Ryan Bernholz, the best team penning-bond trading cowboy on the East Coast! Ryan was born and raised on Long Island, spent several years living in New York City, and then moved to Westfield, New Jersey where he currently lives with his wife, Ellen, and children, Kyra, Ryder, and Lola. He also has a small farm close to New Paltz, NY where he keeps his horses. Ryan works for an investment bank in NYC and is currently responsible for their residential mortgage trading business. He has been with this bank for the past 18 years. Ryan grew up riding horses during his family summer vacations at Pinegrove Dude Ranch in the Catskills. During this time he only got to go trail riding but he fell in love with horses and the cowboy lifestyle. This past January Ryan invested with two partners and was able to reopen this previously defunct dude ranch, today known as Pine Ridge Dude Ranch. He hopes to continue to allow future youth, and maybe some adults, to get a taste of the western lifestyle. Ryan attended college in Bethlehem, PA at Lehigh University. During his time at Lehigh he wrestled competitively. He now enjoys coaching his son Ryder as he starts his own wrestling career. When Ryan isn't at a horse show he also enjoys golfing and spending time with his family. Ryan bought his first penning horse from Nick Borgia in 2015 and by February of the following year was penning and sorting consistently. He has been hooked since his first show. Ryan loves team penning and sorting because it gives him time with his horses, the friends he competes with, and his son. A weekend at a horse show means a weekend without electronics and he enjoys the time to unplug. Ryan also enjoys the competitive nature of the sport and team penning fills the void that was left when Ryan graduated from college and no longer wrestled competitively. Ryan also enjoys meeting new people and the family vibe that is between one another, especially at Cimarron Arena. Ryan credits Nick "The Show" Borgia with helping him to improve his horsemanship and penning and sorting skills. He says, "Nick is handy with a horse and very knowledgeable about the theory and strategy behind team penning...when you add in the entertainment factor, it's hard not to gravitate towards the guy." Ryan has also learned a lot by watching videos online, reading, and attending clinics that focus on the fundamentals of horsemanship. Buck Brannaman and the late Ray Hunt are two cowboys that Ryan follows and looks up to. Ryan believes that basic horsemanship is universal, despite the discipline of riding, and you can learn something from anyone. The advice Ryan lends to new penners and sorters is to introduce yourself to a few people and make friends, don't be shy. Ryan's favorite part about coming to Cimarron Arena is getting to bring his children. He says, "the Butts family treats them like their own family...Ryder asks daily how Rob is doing!" Thanks for sharing with us Ryan and we look forward to seeing you and your family at future shows, hopefully even your wife, too!

Morning after the snow

We moved some of our herd down to our sister property where they they are shoulder deep in green grass.

My youngest enjoying some lessons with her cousin Andrea Davey. A few months ago she wouldn't get within 10 feet of a horse. The pink helmet and the big saddle pad helped. Now we just need to add some cows into the equation!

What’s the Difference Between Grain-Fed and Grass-fed?

Very good read on cooking grass fed beef. Shannon shares what grass-fed customers need to know about what makes a piece of grass-fed meat different from grain-fed, and what that means in the kitchen so they can have the best meal possible.

-Vacuum sealer mastered
-Cooked in 129 degree water for with an anova precision cooker.
- Seared about 2 minutes a side in hot pan with a little butter and olive oil.

Very flavorful and juicy. Success!

First attempt at doing some grass fed beef sous vide style. Some salt,pepper and a little rosemary. Now time to figure out the vacuum sealer!

Sunrise on a brisk morning

Some of you might have seen it on my personal page but I figured i would post it here as well. My daughter Lola went and rode Carl with her cousin Andrea on back to back days! Although it wasn't at TSF it still made me a happy dad to see my daughter find interest and excitement in horses (well not really horses, just one pony named Carl). Carl had to endure a pink saddle pad that Lola got for xmas but he wore it like a real man.

By the end of day 2 Lola thought she might want to brush some of dads horses as long as I could provide her a pink brush. 2 special days with my girl, some good dad/daughter bonding time. Looking forward to 2017.
