Give thanks to your leftovers with this easy Loaded Turkey Meatballs recipe!

Ingredients
1 lb ground turkey
1 carrot, peeled and grated
1 zucchini, grated
1 small brown onion, finely diced
2 tsp minced garlic
1 egg, lightly whisked
1 tbs coconut aminos*
2 tsp dried parsley
2 tbs almond meal
pinch salt & pepper
4 tbs olive oil

Directions
Sauté onion with 1 tablespoon of olive oil in fry pan for 5-6 minutes until it softens. Add garlic and sauté for further 2 minutes. Set aside to cool.

In large mixing bowl add ground turkey, grated carrot and zucchini, egg, coconut aminos, dried parsley, almond meal, salt, pepper and cooled onion mixture and mix well until thoroughly combined. Divide mixture into 9 meatballs.

Reheat fry pan and add 3 tablespoons of olive oil. Cook meatballs turning every 3-4 minutes until cooked through.

Ready.. set.. go! Here's your daily reminder to keep up the work and accomplish those goals.

Billing will be turned off and you will not be billed for December until we are allowed to reopen. Pre-paid memberships will have an extra month added. If you have any questions please reach out to us when we are able to reopen.

[11/18/20]   We are aware of the rumors about what Gov Walz could say this evening in regards to gyms. While it is not confirmed but we do anticipate the gyms to be closing.

Unfortunately, arms don't tone themselves. Try these 4 moves when you need to give your arms some TLC!

PUMPKIN SPICE PANCAKES

Ingredients
1/2 cup pumpkin puree*
1 medium-sized ripe banana, mashed
2 eggs
2/3 cup almond meal 2/3 cup buckwheat flour
2 tsp baking powder
2 tsp mixed spice
2 tsp vanilla paste or essence
1 tbs coconut cream coconut or olive oil for greasing

Instructions
In a mixing bowl whisk together pumpkin puree, mashed banana, eggs and vanilla.

Mix in almond meal, buckwheat flour, baking powder, mixed spice and coconut cream until well combined making a thick pancake batter.

Grease and place fry pan over a low to medium heat. Spoon 2-3 tablespoons of batter into pan and cook for 2-3 minutes or until top looks set.

Flip pancake and cook for a further 1-2 minutes. Repeat process until you’ve used up all the batter.
