Cold oil fries just might be the best method for making french fries at home. It produces the crispiest exterior while maintaining a creamy potato interior. Plus, if you find a way to fry them outside, that’s even better! Sunday we set up the DISC-IT Grill, added sliced potatoes and just enough oil to cover them. Then we let them come to a simmer and fry until they were golden and crispy (30-45 minutes). This is our favorite method for making french fries, however, this time we added a large scoop of beef tallow. Not too long ago, we read online that even a little bit of tallow added to oil when frying potatoes would mirror the delicious french fries that one golden arched fast food chain used to serve many moons ago. I’m not sure if I was just imagining it, but this batch was more flavorful and had an even better overall texture (inside and out), than previous batches without the beef tallow. Was it my imagination? I don’t know, but I’m going to happily test out this theory frequently to be sure. You know, in the name of “science “. 😉🍟

Hello to all my friends and family, I know Christmas is rapidly approaching. Here are a few thoughts for Christmas gifts. I have a friend at DISC-IT Grill that can customize your Smoker, Firepit and Disc-It with accessories. I love all the ones he has made for me.
A few nights ago, Kirk rolled out the double DISC-IT Grill and we built some delicious tacos. He marinated chuck steaks in olive oil, lime juice, onion and garlic then hit them with our Green Chile Rub and quickly seared them on the flat side of the double Disc-It. He pulled these off and chopped them up. On the disc side of the double Disc-It he added cubes of his home cured Anchonero Hot Bacon, onion, garlic and jalapeño. Next, he added the steak back to the disc and seasoned generously with more Green Chile Rub. To build these tacos, we started with homemade Bacon Fat Flour Tortillas (I’ll add a link to the recipe in the comments), added smashed avocado, salsa, that glorious meat, sliced radish and the lightest sprinkle of grated oaxaca cheese. Is it just me, or is it impossible to get tired of tacos?
We rolled out the double DISC-IT Grill for dinner the other night. This thing is a beast and will easily turn your backyard into an outdoor kitchen. We needed to clean out the fridge so wilty veg, some homemade bacon, frozen shrimp, leftover rice, and scrambled eggs, took turns in the Disc It to magically be transformed into Shrimp & Bacon Fried Rice. Minced ginger, finely chopped garlic, sesame oil and plenty of green chile rub ensured this dish was infused with flavor from beginning to end.

Philly Cheesesteak stuffed bell peppers and cauliflower rice! Dinner on the DISC-IT and @sidewindergrills . Check out this Keto dinner recipe .. sooooo good! Thinly sliced some steak and marinated it with some Tio Antonios DISC-IT Fajita rub and flash seared it on a super hot 🔥 DISC-IT with a bit of extra Virginia olive oil. Then added the cut vegetables and sautéed all together. We cut the bell peppers in half and generously filled the open faced peppers. Added plenty if shredded parmesan cheese,then topped with a slice of provolone cheese and again dusted with the Tio Antonios DISC-IT Fajira Rub. Smoked on the Cobra Series Sidewinder grill at 350f for 25-30 minutes. Then, back to the DISC-IT, added a bit of olive oil and scrambled 6 eggs. Turned the heat 🔥 way up and then, on a bit more olive oil, fry the Cauliflower Rice and veggies! Amazing simple and quick dinner! #stuffedbellpeppers

Amazing dinner on the DISC-IT. Likely one of my favorite all time shrimp recipes on the DISC-IT. (Thank you Hil and Pat Moncayo) Check out the fried cauliflower rice (was incredibly awesome) and of course asparagus. All cooked on the DISC-IT grill!

Shrimp recipe

1 T coarse sea salt
1/2 T fennel seeds lightly crushed
1/2 T corriander seeds (lightly crushed) or powder
1/2 T cumin seeds (lightly crushed) or powder
1/2 T crushed red pepper
Olive oil (for above quantity 1/4 cup)
2-2 1/2 lbs shrimp

Make marinade preferably day ahead and refrigerate. Many times I do all at same time. Pour over defrosted shrimp and mix well. Heat Disc-it on high until hot, add shrimp and cook quickly, abt 4-5 minutes.
