Each year, National Read Across America Day is celebrated on March 2nd, the birthday of Dr. Seuss. The annual event is part of Read Across America, an initiative on reading creative by the National Education Association. Since the event is designed to encourage reading in children and is fostered through the schools, when March 2nd lands on a weekend, the day is observed on the closest school day.

National Horse Protection Day on March 1st highlights the plight of horses in America and beyond. The day aims to help thousands of unwanted horses in this country to find forever homes.
The horse holds a legendary mystique in the American culture. In North America, the legendary horse is embedded in our culture and runs deep into the roots of our history. As the country grew, our indebtedness to the horse grew, too. While few people see the horse as much more than a recreational animal today, they still serve on working ranches. As a therapy animal, horses relieve the symptoms of PTSD, anxiety, and other disorders. Long past their age as a plow horse or part of the cavalry, they continue connecting to humans, and we continue to rely on them.
However, despite their legendary status, many go unwanted, abused or neglected. National Horse Protection Day is about addressing those issues. Around the country, several organizations support horse rescue, rehabilitation, and adoption. Their programs offer shelter and veterinary care for horses that have been neglected or abused. Many of them provide a sanctuary where the horses live out the remainder of their lives. Once rehabilitated, many of the horses become available for adoption.
All of these services require funds, volunteers and education for the general public. Food, medical supplies, shelter, and training all take time and money. Depending on the condition of the horse, costs add up.

National Polar Bear Day, also known as International Polar Bear Day. focuses efforts on February 27th to learn more about the polar bear and conservation efforts where the polar bear is concerned.
Polar bears can reach a height of 9 ft tall and a weight of 1400 pounds. They have large front paws, which are slightly webbed, that are used to paddle as they swim. As they are powerful swimmers, some polar bears have been seen swimming hundreds of miles from land. However, some of the distance may have been covered by floating on sheets of ice.
The polar bears have a warming layer of fat which is covered by their thick coat of insulating fur which helps them live in the colder environments.
Some organizations use this day to raise awareness of the declining number of polar bears worldwide. It is believed by many that these beautiful creatures are threatened due to global warming and the consequential loss of their natural habitat. Groups around the world gather together to find ways to make a difference and spread information to others.

Pistachios arrived in the United States sometime in the 1880s, but they have been cultivated in the Middle East since Biblical times.
The pistachio tree grows to about 20 feet tall needing little or no rain and must have high heat. Amazingly, in Iran, they claim to have 700-year-old pistachio trees! A new tree takes between 7 and 10 years to mature and bear fruit.
Pistachio Facts:
All pistachio shells are naturally beige in color. Some companies dye nuts red or green if nuts are inferior or for consumer demand.
California produces about 300 million pounds of pistachios each year, accounting for 98 percent of America’s production.
Pistachio shells typically split naturally when ripe.
The kernels are often eaten whole, either fresh or roasted and either salted or unsalted.
In the Middle East, people call the pistachio the smiling nut.
In China, people call the pistachio the happy nut.

The tortilla chip is most commonly served with salsa, chile con queso, guacamole, cheese dips or other dips. Tortilla chips are made from corn tortillas cut into wedges and then fried. The tortillas are made from corn, vegetable oil, salt, and water. Typically made with yellow corn, tortillas can also be made with white, blue or red corn.
Even though tortilla chips have always been considered to be a Mexican food, known as tostados, they were first mass-produced in Los Angeles in the late 1940s. It is said that the triangle-shaped tortilla chips were made popular by Rebecca Webb Carranza as a way to use the misshapen tortillas that were rejected from the automated tortilla manufacturing machine that she and her husband used at their Los Angeles deli and tortilla factory.
Carranza realized that once the discarded tortillas were cut into triangle shapes and fried, they became a popular snack. She then sold them for a dime a bag at the El Zarape Tortilla Factory. Carranza received the Golden Tortilla Award in 1994 for her contribution to the Mexican food industry.

In the December 1953 issue of Esquire magazine, the margarita cocktail was the “Drink of the Month.” The recipe as printed was:
1 ounce tequila
Dash of Triple Sec
Juice of 1/2 lime or lemon
Pour over crushed ice, stir. Rub the rim of a stem glass with a rind of lemon or lime, spin in salt—pour, and sip. (Wikipedia)
