“She was 18. Her people, who loved her whole life, took her, a vaccination booklet, a leash, a collar and her belongings and took her to the Baldwin Park shelter. They said they were tired of fighting with an older dog, signed papers and left, without even looking at her.
When she was picked up by a volunteer at the shelter, she leaned on him probably wishing it was all just an ugly dream.
The moment was immortalized by photographer John Hwang, who was in the shelter at the time.
Unfortunately, dogs love sincerely, with all their heart, with all their soul and are unable to understand that human 'love forever' most often has an expiration date.. - to annual, to moving, to illness, to old age...
Dogs definitely deserve better people!”

Dinner in a Pumpkin

Dinner in a Pumpkin is a yummy and fun meal cooked right inside a pumpkin! Perfect for serving on Halloween night before the kids go trick or treating.

Prep Time: 30 mins
Cook Time: 1 hr 30 mins
Serves 8

Ingredients:

1 medium pumpkin (or 2 smaller pie pumpkins)
3 tbsp butter
1 diced onion
1 cup sliced fresh mushrooms
2 celery stalks, chopped
2 cloves of garlic, minced
1/4 cup chopped fresh parsley
1 1/2 lbs lean ground beef or turkey
8 ounces water chestnuts, drained
Salt and pepper to taste
10 ounces can of cream of mushroom or cream of chicken soup
1/4 cup brown sugar
3 tbsp soy sauce
1 tbsp Worcestershire sauce
4 cups cooked rice
Instructions:

Preheat oven to 375 degrees. Line a baking sheet with foil. Thoroughly wash and dry the outside of the pumpkin. Cut the top off the pumpkin and clean out the pulp and seeds. Place the pumpkin on the baking sheet. Save the top.

In a large skillet, sauté onion, celery, mushrooms, and garlic in butter. Add ground beef or turkey and cook until the meat is no longer pink. Drain the grease off and add salt, pepper, parsley, and water chestnuts.

In a large bowl, mix soup, brown sugar, Worcestershire, and soy sauce.

Add the ground beef mixture and cooked rice to the bowl. Mix until everything is well combined. Empty the bowl into the pumpkin and replace the pumpkin top.

Bake for 1 hour and 15 minutes on the lower rack of the oven, or on the rack where the pumpkin can be most centered in the oven. After 1 hour and 15 minutes, remove the top and check the sides of the pumpkin for doneness. The outside of the pumpkin will turn a dark orange, and the inside of the pumpkin should be tender and easily scoop off the sides with a spoon.

If the inside of the pumpkin is still not fully cooked, bake for an additional 10-15 minutes. The cooking time will vary depending on the size of the pumpkin.

Be sure to scoop off chunks of cooked pumpkin into the casserole as it is served! The pumpkin and rice mix are delicious together! Enjoy! 🎃 11/07/2023
