DIRECTIONS:

DIRECTIONS:
1. Cook lentils until al dente, adding a pinch of salt as they cook. Drain, and place in large mixing bowl.
2. Cook bacon over medium-low heat until crisp and fat has cooked off (about 8 minutes). Remove bacon and pat dry with a paper towel. Leave bacon drippings in skillet.
3. Add the potatoes, increase heat to medium, and sprinkle with salt and pepper. Cook, stirring occasionally, until the potatoes are crisp and golden, about 12 to 14 minutes.
4. Remove pan from heat, then add vinegar and mustard. Stir to coat the potatoes in the vinegar, mustard, and drippings, then scrape all of the skillet contents into the bowl with the lentils. Add the peas.
5. Stir to combine, then give the salad a taste. Add salt and pepper and/or a splash of vinegar (for more tanginess) as desired. Add chives. Serve at room temperature. Makes 5 servings.
