Support your local farmers market or head to the store and find three fruits and/or veggies of various colors to eat this week. Eating a variety of plant fibers can help increase gut microbiome diversity and a variety of polyphenols that serve different purposes. Green produce supports cellular energy and bone vitality.

This dinner is fantastic for getting protein and making you feel nostalgic and satisfied.
Tator Tot Casserole
Serves 6 Calories: 360 cal Fat: 16g fat Carb: 22g Fiber: 2g Protein: 37
Ingredients
1 lb 99% Lean Ground Turkey (brown an extra pound of ground turkey or chicken for homemade pizzas tomorrow night)
1 tsp Onion Salt
1 tsp Garlic powder
1 small can (10.5 ounce) 98% Fat Free Condensed Cream of Chicken soup (Or cream of celery soup)
1 ½ C Mixed Veggies
1 tbsp mustard
2 tbsp Worcestershire sauce
Tater Tots (enough to cover the top)
2 cups shredded cheese
Salt and pepper to taste
Preheat the oven to 425. Spray a 13 x 9 baking dish with cooking spray. Spray a skillet with cooking spray and cook and crumble ground turkey. Season it while still raw with onion and garlic powder. Add salt and pepper to taste. Once turkey is no longer pink, add mixed vegetables, soup, mustard and Worcestershire sauce. Stir thoroughly. Once combined, transfer to a baking dish, top with tots. Bake at 425 for 7-10 minutes. Add cheese and bake for another 5 minutes or until the cheese is melted.
Tips: This recipe is a great one pot meal if you have a Ninja Foodi. The directions are pretty much the same. Use the sautee feature (medium heat) to cook the meat and the airfryer feature to cook the tots. Set the airfryer at 390 degrees and start checking the tots with a fork for crispness at 7 minutes. Once they are crisp to your liking, shut off the airfryer, add cheese and close the lid to melt.
