If you are watching your carb intake, for health, diet, or any other reason, there are always yummy substitutions that you can apply. Mexican red rice is delicious, but there might be too many carbs for some. I prepared the "real thing" today, but also the "cauli rice" version, for those of us watching carbs. You can't (almost) tell! Healthy food can be tasty and delicious! !

Buenos dias mis amigos de "Feibuk". Feliz Dia de Accion de Gracias para todos!!! Aca son las 730a y ya estamos en las preparaciones para el almuerzo! Un platillo q no puede faltar, a demas del pavo, es el llamado "stuffing" o relleno de pan. En PR, el "relleno" se hace con carne molida y pasas (asi lo hacia mi mama). A los inquilinos de esta casa, les gusta la version de USA! 😂. Y ustedes? Que platillo no falta en la mesa de hoy?

Food is medicine. Today a comforting, warm, delicious Vegetable Green Thai Curry is all I needed to fight this pesky bug. Ginger, garlic, cilantro, sweet potatoes, coconut milk..Yum!

How about some Keto "Meatless Monday" dinner? Menu today is Mushroom Cauli-rice risotto with shaved parm and real cream, accompanied with garlic buttered green beans. Goes great with grilled chicken or steak too🤤

What's your "guilty pleasure" meal? Mine is Chicken Livers and Onions. I know the cholesterol in it is crazy, but the protein and iron is what I am looking for. And those onions!🤤 I cook this dish every couple of months, but when I do cook it, oh my! I am eating this sucker breakfast, lunch and dinner!!!

These are meal prep portions for someone working on increasing muscle mass. 4oz of steamed jasmine rice, 8oz of pan fried garlic chicken and a side of 4oz of broccoli. Delish for about 450cals!

So tonight I had a pizza craving. I made these out of SmartBuns, no carb keto bread, a smear of ricotta cheese flavored with Italian seasoning, 2tbsp of low sugar tomato sauce and 2oz of mozza! They are super tasty and the best thing is they are 5g Net Carbs for BOTH!!!

Ok... I Know I've been shutting the front door a lot lately... but... SHUT THE FRONT DOOR!!! I just had a Keto "Big Mac Bowl" for lunch and y'all... It tasted like the REAL thing!!! and super easy to do... Got me some pre-made burgers (wanted to save time, but by all means, you can make your own patties) and put them in the oven with some seasoning, at 375 for 15min (turning them once) You can cook them anyway you want (pan, grilled, broil..) In the meantime as those cooked, I chopped romaine lettuce, added 1/2 bag of broccoli slaw, sliced radishes and sliced sweet onions. I added a tablespoon of dill relish (the one you use in the hotdogs) put a patty right on top and added some sliced cheese on top, and by now it was hooey-gooey...AND to finish it off, a drizzle of Walden Farms no sugar Thousand Island dressing.... It.WAS.AMAZING!!!! and only about 3gcarbs (from lettuce and the cheese!) :) My belly is happy!!!!
