High Protein Pumpkin Pancakes 🍁🥞
Cozy, fluffy, protein-packed, and made with simple ingredients 🤎 The perfect healthy fall-inspired breakfast when you’re craving something sweet but still want to hit your protein goals!
Ingredients — 1 serving
• ½ cup 100% pumpkin puree
• 1 egg
• ½ cup egg whites
• ¼ cup oat flour
• 1 scoop vanilla protein powder
• ½ tsp baking powder
• ½ tsp pumpkin spice
• ½ tsp cinnamon
• 1 tsp maple syrup or stevia, optional
• 1–2 tbsp milk, as needed
• Pinch of salt
Mix all the ingredients!
Mix everything until smooth. Let the batter sit for 2–3 minutes.
Medium to low heat

Cook small pancakes in a lightly greased nonstick pan over medium-low heat for 2–3 minutes per side.
Top with Greek yogurt, cinnamon, walnuts, and a drizzle of maple syrup. ✨

Simple ingredients: eggs, milk and your preference butter or oil! And cottage cheese
Muffin mix already made
Mix the liquid ingredients
All together!
Now the whole mix (almond flour)

Preheat at 350 degrees for 18 min and the cool down for 15 min
