Why do turtles cross the road?? 🐢

The Eastern box turtle is Kentucky’s only terrestrial (land-living) turtle, and streets and highways are common obstacles they must navigate in their home range.

Sightings along roadways are common through the spring and summer months, when these turtles are most active. If you encounter any species of turtle crossing the road this summer, help them across if you can do so safely, but let them be wild.

When left in the wild, it’s estimated that Eastern box turtles can survive nearly 100 years!

It is safe to go outside, laugh, and be happy. Just remember to be proactive and avoid crowds, hands your wash, and maintain 6 feet or more of space between you and others. Take advantage of the beautiful weather and remember you are never fully dressed until you have your smile on😀

Social Distancing Guidelines
Always follow social distancing guidelines. Maintain 6 feet of space between yourself and other people. If others are not staying socially distant, find another sale to shop. For more information, contact your local County Extension Office.

This is a great way to use fresh peppers from your garden or the Cumberland County Farmer's Market.

One of our most popular Plate It Up Kentucky Proud recipes, Beefy Stuffed Peppers, is a quick dinner dish packed with flavor and punch! We love this paired with a side salad or other vegetable of choice to make it a full meal. It is a great recipe to get young kiddos involved in the kitchen because of its simplicity!

Bell peppers are an incredibly rich source of Vitamin C (more than found in an orange!), which helps support and protect our immune system. Find the full recipe here http://bit.ly/PIUKP_BeefyPeppers

University of Kentucky College of Agriculture, Food and Environment

The College of Agriculture, Food and Environment does not tolerate hate, violence, or discrimination within our communities. Each time an instance of such behavior is brought to our attention, we try to address all concerns with the same sense of urgency and gravity.

It is our intent to protect every member of our community so that they feel safe, respected, and championed as a Wildcat. We also know impact is greater than intent in every case. We have room for improvement in both our physical and digital spaces, but we are committed to learning, fostering dialogue, and taking timely action to see change through.

This year has presented our college with many new challenges; some of those challenges are familiar still. We will continue to take decisive action in the name of respect, transparency, and progress for every individual who calls our college home.

Jalapeño peppers are known for being somewhat spicy. What gives these peppers their heat? Capsaicin. Capsaicin is a colorless and odorless compound naturally found in the peppers. Once our taste receptors interact with capsaicin, we recognize the burning sensation. Apart from adding heat to dishes, jalapeños are rich in vitamins A and C.

Today's Plate It Up Kentucky Proud recipe of the day is our Jalapeño Poppers. Find the recipe at https://bit.ly/PIUKP_JalapeñoPoppers

*Be extra cautious when preparing dishes with these peppers - do not touch your nose, eyes, or mouth after
handling hot peppers - and wear gloves, if possible, to reduce irritation.
