Sanity Saturday has finally arrived! My mini-me and I hit the library, because let's be real, books are my therapy. I mean, what's better than disconnecting from reality and diving into a new story? I'm obsessed with the app my husband, Justin Bower, created! ๐Ÿฅฆ๐Ÿง„๐Ÿซ› Not only can you find classic dishes like braised French chicken, but you can also ask it to create something entirely new with ingredients you have on hand. Today, I asked it to make something with onion, green beans, mung beans, garlic, broccoli, and couscous, and it gave me this incredible 'Mung Bean Sprout & Veggie Couscous Bowl' recipe! * Spinach ๐Ÿฅฌ

* Avocado slices ๐Ÿฅ‘
* Couscous
* Spices: salt ๐Ÿง‚ pepper, cumin, paprika, and garnished with parsley ๐ŸŒฟ and an add of lemon ๐Ÿ‹

1. In a skillet, sautรฉ onions and peppers until soft.
2. Add diced tomatoes and spinach and cook until the spinach wilts.
3. Crack eggs into the mixture and cover the skillet, allowing the eggs to cook to your preference.
4. Once the eggs are cooked, top with avocado slices for added richness.
5. Serve hot, and enjoy this wholesome dish!

Iโ€™m loving my new favorite go to โ€”> purple cabbage tacos ๐ŸŒฎ๐Ÿฅฌ Such a delightful way to play and try different fillings. Today I did baked Cod, Zucchini and Onions ๐Ÿง… ๐ŸŸ with a splash of lime ๐Ÿ‹โ€๐ŸŸฉ juice & some hot sauce! Iโ€™ve also switched out fish for lean ground turkey and itโ€™s equally satisfying and delish ๐Ÿ˜‹
