Like it Hot ? How bout' Sweet ? Well, have I got something for you. Give this recipe a try & let me know what you think... " RED LENTIL & SWEET POTATO PIZZA W/ a CURRY KICK" It is Indian inspired.
INGREDIENTS:
3/4 C dry lentils (Soak 30 cool water)
1 1/2 C water
1 TBS EVOO
2 Cloves garlic, minced
1/2 sm eggplant, diced
1 LB sweet potato
14.5 OZ canned italian diced tomato, undrained
1 TS ground ginger
1 1/2 TS curry powder
1 TBS ground cumin
1/4 pepper
salt optional
1 12" whole wheat thin crust prebaked or Naan
1/4 grated romano

DIRECTIONS:
Combine lentils & wat er in pan bring to boil then cover & simmer low heat approx 20 minutes or until tender. Drain, don't rinse, set aside.
Preheat oven 375 degrees. Spray pizza pan w/ cooking spray.
Heat oil in pan over medium heat mix in garlic & onion saute' lightly browned.
Stir in eggplant & sweet potatoes & 1/2 can of juice from tomatoes. Simmer until juice is absorbed.
Next, stir in tomatoes, ginger, curry, cumin & pepper simmer until potatoes begin to soften. If juice cooks off add small amount of additional water or proportion water & low sodium chicken broth & cover w/ lid.
Place crust on pan & cover to edges of crust w/ lentils. Next layer is the potato mixture. Last... the cheese :)
Bake in oven until edges are golden brown.
Serving suggestion: Additional cumin & curry can be added to recipe or served on the side to taste as these spiced are an added health benefit. ENJOY !

Good sugars. bad sugars...do you know the difference ? Lets break it down...With all the confusion out there about fructose, glucose, sugar alcohol, it's enough to make your head spin. I mean literally make your head spin (headaches). Let me "simplify" it for you. Simple sugars are just that, simple. In everyday life we like it when something is simple so why not our sugars ? Here, if it comes from the ground, a tree or a vine go for it. So the next time your craving something sweet and your sweetie isn't there...grab a piece of fruit or a hand full of crunchy baby carrots. How satisfying. But remember, to much of anything good is just that...to much ! One last thing, if you must dip try a greek yogurt or peanut butter (be mindful of food allergies).That will add a healthy serving of protein. TrayPro :) Have a healthy day
