🇸🇻 Plato Típico Salvadoreño (simple + cozy)

This is far from authentíco but not bad for a white guy. 🤭😂

White rice 🍚
• Rinse rice
• Cook with water + salt until fluffy

Frijoles 🫘
• Simmer cooked red or black beans
• Add onion, garlic, salt
• Mash slightly for a creamy texture

Pollo guisado 🍗
• Season chicken with salt, pepper, garlic, coriander, onion powder, cumin, and oregano
• Brown in avocado oil
• Add onion, bell pepper and let simmer before adding tomato sauce or paste, a splash of water or more if using tomato paste
• Add the same seasoning to the tomato sauce
• Simmer until tender
• Add the beans to this mixture

Maduros 🍌
• Slice ripe plantains
• Fry in coconut oil until golden

Plate it up, rice + beans + chicken, plantains on the side.
Simple food, real comfort. Make it much healthier by swapping out seed oils for more stable oils like coconut or avocado.

Depending on the quality of your meat, you could eat this raw. Therefore, I have no fixed recommendations on how to cook it. I like to cook it quickly at a high heat so that it is crispy on the outside but a medium to medium-rare on the inside. If you use commercial quality ground beef or eggs, I would cook it well done to avoid the risk of food-borne illness.
