Ok let's be real here! If you starve yourself and think you're going to lose weight...that's just silly...because you wont. Your body is like a car. It RUNS on fuel and if it ever feels like you're not giving it ENOUGH...it will SLOW DOWN and hold on to every single ounce of fat you have in there and burn the MUSCLE you have instead. Yes it sucks, but its how our bodies WORK! Be SMART about your weight loss goals and fuel your body with ENOUGH calories so that you get the best results possible.

Zucchini Fritters
Yields: 5-6 fritters
1 cup raw shredded zucchini
2.5 TBSP ground flax seed
3 egg whites (or 1/2 cup + 1 TBSP liquid egg whites)
1/2 tsp garlic powder
1/2 tsp onion powder
any other preferred spices (I like cayenne!)
Combine all the ingredients in a bowl and stir well. Let sit for about 5 minutes so the zucchini and flax will absorb the egg whites a bit. Then simply take a spoonful of the mixture and place it in a pan sprayed with nonstick spray. Flatten it a bit with the spoon/fork. If there’s a little extra egg white in the bowl, evenly distribute it on top of the fritters. Cook on a medium heat for 4-5 minutes, or until lightly browned. Flip, and continue to cook until the eggs are fully cooked. Done :)
Love them with spicy-mustard. I like them cold as well. Cook a few batches and have them as a snack during them day.

I’ve made baked apples before. I’ve made baked oatmeal before. But baked oatmeal in an apple was a first for me and it was DELICIOUSSS. Highly recommended!
Baked Cinnamon Apple Oatmeal
Serves: 1
1 medium apple
1/3 cup old-fashioned oats
1/2 cup water
1 tsp chia seeds
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp baking powder
2 TBSP sugar free syrup
1 stevia packet
Preheat the oven to 350F. Slice the top off of your apple and then create a well in the apple by scooping out the core. Save the edible portions! Combine all of the ingredients in a bowl and microwave for 60-90 seconds. Slice and add in the edible portions of the apple from when you made a well, and stuff the apple with your oatmeal! Not all of it fits, but cram as much as you can in there. Just eat whatever is left ;) Place the stuffed apple and apple top in the oven and bake for 30 minutes at 350F. After I took it out, I topped mine with a little more sugar free syrup and cinnamon.

5 lbs of fat vs. 5 lbs of muscle
The scale isn’t budging…. You are putting in the time, working out and lifting heavier then you have prior. Your clothes are FITTING better and you FEEL smaller but what is going on? That SCALE number isn’t budging or even worse, it keeps going up? Before you toss the scale out the window there is a bit of critical information you must learn about Fat vs. Muscle.
Muscle just takes up so much less space than fat. So yes, your weight may not adjust much but when you replace fat with muscle you will be so much smaller and tighter.

Orange Shrimp Stir-Fry
Serves: 2
7-8 oz frozen, pre-cooked shrimp
1 orange
1/2 large zucchini
1/2 green bell pepper
1/2 white onion
1 cup frozen sliced okra
1 TBSP minced garlic cloves
1 TBSP sesame seeds
3/4 tsp ginger
3 TBSP low sodium soy sauce
1/2 cup no salt added chicken broth
Peanut Sauce
3 TBSP peanut flour
3-5 TBSP unsweetened almond milk
Start by unthawing your pre-cooked frozen shrimp. For this you just need to run it under cold water for 5-6 minutes. I like to just set my shrimp in a strainer with the sink water running while I prep the rest of dinner. While that’s going, peel your orange and cut each individual slice into 3-4 smaller cubes. Chop your zucchini, green bell pepper, and onions and mince the garlic. In a large frying pan, add all of your ingredients except for the shrimp and the peanut sauce ingredients. Let it all cook on a medium heat until the liquid is cooked off. Then toss in the unthawed shrimp and cook for 4-5 more minutes in order to heat up the shrimp. Done! Top with more sesame seeds and the peanut sauce. For the sauce, I start with a 1:1 ratio of peanut flour to almond milk and just add more milk slowwllyyy until it’s how runny I want it.
For the noodles I used angel hair shirataki noodles.

Carrot Cake Egg White Oatmeal

Serves 1
1/2 cup old fashioned oats
3/4 cup water
3 TBSP carrot puree (I use baby food)
1-2 TBSP shredded carrot
1/2 tsp cinnamon
1/2 tsp vanilla extract
Stevia (Optional)
1 egg white
Mix all of the ingredients in a bowl except for the egg white. Microwave for 2 minutes. Then stir in the egg white and microwave another 30-90 seconds, stirring every 20 seconds until the egg is cooked. You have to stir in intervals or else the egg will cook in clumps, which isn’t as appetizing…. Anyways. I topped mine with more cinnamon, raisins, Better’n Peanut Butter, and a tablespoon of sugar free syrup. Pecans and/or walnuts would also be PERFECT with it!

Weekends tend to be a time where more struggle. It's like we ease up in our thinking and suddenly our weekends erase the hard work during our week.
Don't fall into the trap!
Weekends still need to be planned out. And if you feel you have less structure, create it.

Excuse: "It's no use trying to lose weight. I'll always be fat because it's in my genes!"
Reality: Scientists are uncovering genes that contribute to obesity. Some believe there are four levels of susceptibility:
1)You have a single gene that's gone awry, virtually guaranteeing obesity. This is very rare.
2)You have a strong genetic predisposition that programs your slow metabolism and gives you faulty signals so you don't know when you're full. If this is your case, you can outsmart the genes with a healthy lifestyle. But you've got to be more vigilant than most people.
3)You have a slight genetic predisposition for gaining weight. You can get away with more food and less exercise than the person with the strong genetic disposition, but you've still got to watch it.
4)You're genetically resistant. You can eat sensibly and gain some weight, but you won't become obese. Lucky you!
You probably fall into category 2 or 3. But if so, this is not an obesity death sentence. Your lifestyle still plays a big role in your weight gain or loss.
For myself I have to be more diligent. And it takes work. And I get tired sometimes.
But it's by choice. MY CHOICE. And a good one! Thats when I go back to my #1 goal of why I started this in the first place.
At the end of the day that's what keeps me going. Because to me if it were to be a certain size or look a certain way that's not good enough for me to want to get up at 5am to workout. I would miss a lot of workouts. Don't get me wrong it's ok to enjoy that but it's not my drive. Losing my mom at such a young age has been a drive for me. I want to be here as long as I can to watch & be apart of my daughters life. And while I'm here if I take good care of my body I can enjoy things in life. And not hurt all the time. Be an example for her. I am blessed with my health and I want to enjoy it as long as I have the opportunity.
Take your food and exercise habits seriously and develop a plan you can stick to for life.
