Punching the chest helps give kinetic feedback to the student to teach them to actually hit something safely when doing the defense. In real life the hits would go a few inches higher to the face.
It also teaches the student to focus on the chest and let the peripheral vision pick up the motion of the attack, which is a vital skill when learning to spar.
