What you need
Servings: 8

1 teaspoon olive oil
1 teaspoon minced garlic
1 white onion, diced
1 teaspoon sea salt
Β½ teaspoon black pepper​
2 tablespoons coconut flour​
Β½ cup white wine
ΒΌ cup nutritional yeast​
1 tablespoon dijon mustard​
1 can (13.66oz) coconut milk
1 (8oz) box of Banza Rotini Chickpea Pasta
2 cans (5 oz) albacore tuna, in water
1 cup frozen peas and diced carrots
2 cups broth (chicken or bone)
2 tablespoons fresh parsley, minced
2 tablespoons fresh dill, minced

For the topping:

Β½ cup nutritional yeast​
1 teaspoon sea salt
1 cup pecans, toasted and chopped
ΒΌ cup fresh parsley

Instructions

1. Turn the pressure cooker on and select the SautΓ© function. Once hot, add the olive oil. Add the garlic and cook for a minute. Add the onion and cook, stirring often, for 2 minutes.

2. Add the salt, pepper, and coconut flour. Cook, stirring often until the coconut flour is golden. Deglaze the pot with the wine.

3. Mix in the nutritional yeast, dijon mustard and coconut milk. Stir and cook until bubbly. Select cancel to reset the pressure cooker setting.

4. Mix in the Banza Rotini pasta, frozen peas and carrots, broth and fresh parsley. Secure the lid on the Instant Pot and Pressure cook on high for 8 minutes. Once complete, allow 7 minutes for the pressure to release. Remove the lid and stir the noodles into the sauce. Pour the mixture into a greased casserole dish.

5. Pulse the topping ingredients in a food processor until combined. Sprinkle evenly over the casserole. Place in the oven under the high broil for 3-5 minutes, watching closely, until just toasted. Serve immediately and enjoy!

Let’s just say that there’s zero guilt in enjoying one of these wholesome chocolate chip cookies – preferably while it’s still warm out of the oven.

The chocolate chips that I’ve used in the recipe below are sweetened with stevia – which is a natural, zero-calorie sweetener and can be found at your local health food market. By using these stevia-sweetened chocolate chips we are able to remove all of the refined sugar from the cookies, giving you a sweet morsel to enjoy while staying on track with your fitness goals. And with only 5 ingredients these delicious cookies are super easy to make. Enjoy!

2 bananas, mashed
1 cup old fashioned rolled oats
Β½ cup vanilla protein powder
ΒΌ cup almond butter OR peanut butter
ΒΌ cup stevia-sweetened chocolate chips

Instructions

1. Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.

2. In a large mixing bowl, mash the bananas. Add the remaining ingredients and mix well. Form 12 golf ball sized cookies out of the dough and press onto the parchment paper.

3. Bake for 10-12 minutes, until golden. Best enjoyed while still warm!

We all know that vegetables are good for us, and that we should eat more fresh veggies in order to increase the fiber and vitamin content of our diets. But, the truth is that most veggie side dishes don’t taste good enough to entice the whole family to dive in.

This recipe is the answer. Broccoli and cauliflower are roasted in an outrageously tasty way that’s simple, quick and full of nutrition.

Serve this delicious veggie side dish with a piece of lean meat for a well-balanced, fitness approved meal.

What you need
Servings: 4

1 bunch broccoli
1 bunch cauliflower
1 Tablespoon olive oil
dash of sea salt
dash of pepper
4 garlic cloves, minced
juice from 1 lemon

Instructions

1. Preheat your oven to 425 degrees F. Lightly grease a large baking sheet with olive oil.

2. Wash the broccoli and cauliflower heads and then pat dry. It’s important to dry thoroughly so that it will roast properly. Cut into small florets.

3. In a medium bowl combine the florets, olive oil, salt, pepper and garlic cloves. Toss until well combined and then spread over the prepared baking sheet.

4. Roast for 25 minutes, stirring halfway through. Remove from oven once the florets are tender with crispy bottoms.

5. Drizzle the lemon juice over the cooked florets and serve immediately.

Creamy Shrimp and Noodles

Have you ever enjoyed a big bowl of creamy noodles dotted with plump, juicy shrimp? Delicious, wasn’t it?! Today’s recipe is a lightened up version of that sinfully scrumptious meal.

This recipe uses zucchini to create grain-free, low-calorie noodles and then mixes it with fresh-made pesto and steamed shrimp. The result is as tasty as the original, with half of the calories. Enjoy!

What you need
Servings: 4

4 zucchini
Β½ cup macadamia nuts
2 cups fresh basil leaves
2 garlic cloves
β…“ cup nutritional yeast
dash of sea salt
juice of 1⁄2 a lemon
ΒΌ cup olive oil
2 dozen large shrimp

Instructions

For the Noodles:

1. Run a vegetable peeler along each zucchini until you reach the seeds, to create long, flat noodles. Place your zucchini noodles in a bowl.

For the Pesto:

1. Place the macadamia nuts, basil leaves, garlic, nutritional yeast, salt and lemon juice in a food processor. Pulse until well combined while drizzling in the olive oil.

2. Peel and devein the shrimp, pulling off the tail and then the rest of the shell.

For the Shrimp and Noodles:

1. Heat a pot of water under a steamer basket. Steam your noodles for about 5 minutes, until tender. Remove to a medium bowl.

2. Steam the shrimp for 3 minutes, until fully pink.

3. Combine the noodles with the pesto and top with warm shrimp. Serve and enjoy!
