It’s the time of year where I start craving comfort food. Pot pies bring me back to those chilly winter evenings in Nebraska while growing up. A quick and easy way to make homemade pot pies is to fill ramekins with your favorite homemade soup and top with a packaged puffed pastry or biscuit. I used @immaculatebaking Organic Flaky Biscuits for this recipe and filled my ramekins with homemade chickpea noodle soup, a vegan take on the classic “chicken noodle soup.” Once the ramekins are about 3/4 filled, stretch and press the pastries on top and bake as per the package instructions for temperature and time. For the past three weeks I have been taking HypnoBirthing classes through @zannybdavis - Prior to these classes, I was feeling anxious and scared about the birthing process. I questioned my mental strength and ability to tolerate the pain. However, these past few weeks have lifted that nervousness and have left me with an immense sense of calmness. I’m so grateful to have crossed paths with Zanny and look forward to deepening this practice over the coming weeks. I am getting so excited to meet you our sweet little son.

My 31 week pregnancy craving and favorite go-to breakfast when the weather is hot. I was inspired by @ellenfisher and added 1/8 cup of non-cooked quinoa to my granola recipe before baking it for some added crunch and it turned out delicious! If you’re worried about the quinoa making the granola taste bitter, it doesn’t at all.

My husband and I came across @katybeskow ‘s “Five Ingredient Vegan” in our local @vromansbookstore this morning and what a find it was! We’ve already enjoyed two delicious recipes from this simple vegan cookbook. Tonight we tried her vegan Cauliflower cheese soup and it was the perfect comforting meal, especially after a busy day of running errands. I am looking forward to testing out another recipe tomorrow! ☺️

My husband and I had a great outing to the new @mixt location in Silverlake. What I loved most about this restaurant is that all of the ingredients are fresh, sustainable, and responsibly sourced. The delicious dishes are prepared in-house by MIXT’s friendly staff. I relished their seasonal “Sunrise” salad while my husband devoured the “Impossible Achiote” salad. While in Italy, I had my first vegan omelet. It wasn’t very Italian of me but I fell in love with the savory dish. Upon my return, I was determined to come up with a recipe to recreate this delicious meal. The following recipe is a twist on the original, including sautéed garlic and herb mushrooms. I dare say I may have beat the original! *
Kyla’s Savory Chickpea Omelet Recipe:

Serving Size: 2 omelets
*
Omelet Ingredients-
½ block organic extra firm tofu (lightly pressed)
½ C. garbanzo bean flour
2 Tbsp nutritional yeast
3 Tbsp non-dairy milk (preferably unflavored & unsweetened)
Pinch of himalyana salt
Pinch black pepper
Pinch of turmeric
1 1sp avocado oil

Mushroom Ingredients-
4oz. sliced mushrooms of choice
1 clove garlic (roughly chopped)
Pinch of thyme
Pinch of oregano

Directions:
Add a drizzle of avocado oil to a pan and saute mushroom ingredients until mushrooms are tender and reduced to about ½ the size. Remove from heat and set aside.
Blend all omelet ingredients in a blender until smooth.
Heat 1 tsp of avocado oil to a pan.
Divide omelet mixture in half and pour one half onto the hot pan. The mixture will be sticky, so use a wooden spoon to smooth out into a circular shape like a pancake.
Add ½ of the mushrooms on top of the chickpea mixture on pan.
Heat for about 2-3 minutes over medium heat until the bottom edges are starting to crisp.
Flip omelet and cook the other side.
Once the other side has started to crisp, fold omelet in half and cook a little more if needed. (Repeat cooking instructions for second omelet)
Top as desired and serve. (I topped mine with chives.)

Lentil Patty Recipe:
1 cup cooked lentils, drained - I used a combination of red and green lentils
1/2 cup gluten free breadcrumbs
1/2 cup finely chopped onion
1/2 cup finely chopped kale
1/4 teaspoon garlic powder
1/8 teaspoon paprika
1 pinch cayenne pepper
Salt to taste
1 flax egg (1 Tablespoon ground flaxseed + 3 Tablespoons warm water)
2 tablespoons avocado oil
Directions:
Mix all ingredients in a bowl. Divide mixture in half and emersion blend (or food process) one half until it becomes a thick paste. Add the paste back into the bowl with the non-blended ingredients and combine. Once the ingredients are evenly mixed, divide into quarters and make one patty with each section. (4 patties total) Grill patties for 10 minutes on the “High” setting in the Ninja Foodi Grill. Flip halfway through for even grilling. Serve with your favorite toppings or sauce. I used kale pesto!
