Tieguanyin oolong tea.
Wei legend.
Deep in the heart of Fujian's Anxi County, there was a rundown temple which held an iron statue of Guanyin, the Bodhisattva of Compassion. Every day on the walk to his tea fields, a poor farmer named Wei would pass by and reflect on the temple's worsening condition. “Something has to be done,” he thought.

Being poor, Wei did not have the means to repair the temple. One day, he brought a broom and some incense from his home. He swept the temple clean and lit the incense as an offering to Guanyin. "It's the least I can do," he thought to himself. And he did this twice a month for many months.

One night, Guanyin appeared to him in a dream, telling him of a cave behind the temple where a treasure awaited. He was to take the treasure and share it with others. In the cave, the farmer found a tea shoot. He planted it in his field and nurtured it into a large bush, from which the finest tea was produced. He gave cuttings of this rare plant to all his neighbors and began selling the tea under the name Tieguanyin, Iron Bodhisattva of Compassion.

Over time, Wei and all his neighbors prospered; the rundown temple of Guanyin was repaired and became a beacon for the region. From this time onwards Mr. Wei took joy in the daily trip to his tea fields, never failing to stop in appreciation of the beautiful temple.

Jasmine tea (Chinese: 茉莉花茶; pinyin: mòlìhuā chá) is tea scented with aroma from jasmine blossoms to make a scented tea. Typically, jasmine tea has green tea as the tea base; however, white tea and black tea are also used. The resulting flavour of jasmine tea is subtly sweet and highly fragrant. It is the most famous scented tea in China.[1]

The jasmine plant is believed to have been introduced into China from eastern South Asia via India during the Han Dynasty (206 BC to 220 AD),[2] and was being used to scent tea around the fifth century.[2] However, jasmine tea did not become widespread until the Qing Dynasty (1644 to 1912) when tea started to be exported in large quantities to the West.

The jasmine plant is grown at high elevations in the mountains. Jasmine tea produced in the Chinese province of Fujian has the best reputation.[1] Jasmine tea is also produced in Hunan, Jiangsu, Jiangxi, Guangdong, Guangxi, and Zhejiang provinces.[1] Vietnam and Japan are also known for the production of jasmine tea.

Longjing tea was granted the status of Gong Cha, or imperial tea, in the Qing dynasty by the Kangxi Emperor. According to the legend,[3] The Kangxi Emperor's grandson, the Qianlong Emperor, visited West Lake during one of his famous holidays.

He went to the Hu Gong Temple under the Lion Peak Mountain (Shi Feng Shan) and was presented with a cup of Longjing tea. In front of the Hu Gong Temple were 18 tea bushes. The Qianlong Emperor was so impressed by the Longjing tea produced here that he conferred these 18 tea bushes special imperial status. The trees are still living and the tea they produce is auctioned annually for higher price per gram than gold. There is another legend connecting the Qianlong Emperor to Longjing tea. It is said that while visiting the temple he was watching the ladies picking the tea. He was so enamored with their movements that he decided to try it himself. While picking tea he received a message that his mother, Empress Dowager Chongqing, was ill and wished his immediate return to Beijing. He shoved the leaves he had picked into his sleeve and immediately left for Beijing. Upon his return he immediately went to visit his mother. She noticed the smell of the leaves coming from his sleeves and he immediately had it brewed for her. It is said that the shape of Longjing Tea was designed to mimic the appearance of the flattened leaves that the emperor brewed for his mother.

Longjing, which literally translates as "dragon well," is said to have named after a well that contains relatively dense water, and after rain the lighter rainwater floating on its surface sometimes exhibits a sinuous and twisting boundary with the well water, which is supposed to resemble the movement of a Chinese dragon.

Legend also has it that to achieve the best taste from Longjing, water from the Dreaming of the Tiger Spring, a famous spring in Hangzhou, is to be used. The water quality of the spring now is certainly very different than before. The tea takes its name from the eponymous "Dragon Well" located near Longjing village.
