NO BAKE COOKIE DOUGH BITES_
(GF/VEGAN) π±| πͺ

I know everyone is popping off about pumpkin, rightfully so (I am too ππ»ββοΈ) BUT these bites definitely deserve some love. They're oil free, dairy free, high in protein, soluble fiber, andddd highly addictive π
_
THE HEALTH:
2/3 cup oat flour
2 TBSP (heaping) peanut butter
3.5 cups chickpeas (trust me - this gives it the cookie dough consistency, protein & soluble fiber. No you don't taste it) _
4-6 TBSP maple syrup or raw honey for non V (sweetness to your preference)
1 scoop vegan vanilla protein powder (linking the one I use in my stories)
1/4 cup almond milk
1/4-1/2 cup dairy free chocolate chips
1 TBSP vanilla extract
Shimmy of sea salt

HOW:
Throw everything into a Vitamix or food processor (except the chocolate chips) & blend on high. Scoop out the doughy mixture and roll in the chocolate chips. Sprinkle additional sea salt to top (optional) & store in an air tight container in the fridge. _

Let things go & let things enter

Everything always works out when you step back from controlling every little detail. When you stop trying to force things, the Universe intervenes on your behalf. It will all make sense one day when you realize you don't have to overextend yourself to get there. You're headed in the right direction.

GF/ V protein banana bread π _
Think we could all use a little healthy banana bread right now βΊοΈ_
I've been doing my best to keep my routine, I still wake up super early, work from home (who knew FaceTime training sessions could be so fun?), workout, program for my online clients, get some sun + now baking up a gluten free storm_
_
The goods_
2 cups almond flour (preferably blanched)
1 heaping scoop vegan vanilla protein
(Linked in stories, this is the only protein powder I've tried baking with)
2 1/2 overripe large bananas (save the other half for toppings)
2 flax eggs (or 2 whole eggs for non-vegans)
1/2 cup melted coconut oil
2 tbsp coconut sugar
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/4 tsp sea salt (if it's not pink Himalayan I don't want it) π
Handful of crushed walnuts (to top)

The mess_
No rhyme or reason, kinda figure it out as I go. Preheat your oven to 350. Make your flax eggs + set aside. Mix dry ingredients first then mash your ripe bananas + add in whisked wet ingredients. Plop in a greased loaf pan with coconut oil and top the mixture with sliced bananas, walnuts + sea salt. Bake for 35-40 minutes and let cool_
No over ripe banana left behind βπ½
