Crock Pot Roasted Root Veggies turned out great! Here's what I did: sliced veggies in approx. 3 inch cuts, tossed with olive oil, garlic, sea salt, fresh ground pepper, rosemary and a bit of caraway seed. Cooked in crock pot on high for 3 hours. yum! They were not mushy at all: I think the secret is to NOT add water.

The weekend started off with a date-night mountain bike ride at dusk, which faded into quiet darkness (bike lights are one of the best inventions ever) with my main squeeze. Such a peaceful way to kick off the weekend and unwind after a stressful week. How are you mixing fitness into your weekend?

Started each morning off with a cold glass of ice water and swapped coffee for hot green tea this week. Had a feeling the coffee was too much acid for my system and wanted to see if I felt better. I did! What are you willing to try to learn more about your body?

off to a fitness conference. Packed a few snacks to help keep me fueled thru-out the day using the carb/protein ratio of: apple/protein shake, red grapes/raw almonds, and red pepper strips with baby carrots/garlicky hummus. (I'm a big fan of garlic...but I'll wait to eat that snack last :-p )
