Even though it's still hot 🔥, hot 🔥, hot 🔥 (did I mention it's still 🔥??) here in Phoenix, I love a quick and easy soup that's full of protein and good stuff! I made this one last week and the family is asking for it again! I like things a little spicy, so I added some habanero sauce to mine!
*this is an instant pot recipe but you could easily adapt this to stove top and let it cook for 15-20 minutes, or until the lentils are done to your preference.
*I skipped the red wine vinegar, spinach and cream at the end. The soup was amazing without! Perfect by itself or over rice, quinoa or a sweet potato!
