In order for us to stay on track with a healthy diet, we MUST have wholesome sweets available so that it becomes easy to make a healthy choice when our sweet tooth acts up. That is precisely why our freezer is packed with large ziplock bags filled with treats like this freezer fudge.
One small square cures our sweet tooth while giving us a boost of usable nutrition and protein. Yum! Staying on track is simple when it tastes this good!
This protein fudge was inspired by the Perfect Bar!
Please keep these fudgy morsels in the freezer because at room temperature it will go back to being creamy and you’ll have to eat it with a spoon rather than your fingers!
SERVES 45
• 1 (26.5 oz) jar Peanut Butter
• ¼ cup honey
• 1⅓ cups coconut milk powder
• 1 cup your favorite Vanilla Protein Powder
• ⅓ cup coconut oil
DIRECTIONS
1 Mix the peanut butter and honey with an electric mixer until fully combined and thick - about 30 seconds.
2 Sift the coconut milk powder.
3 Add the coconut milk powder, Vanilla Protein Powder and coconut oil into the peanut butter mixture, mixing until fully combined.
4 Line a 9x9 rimmed pan with parchment paper. Spread the mixture evenly in the pan. Chill in the fridge for 4 hours.
5 Remove from the fridge and cut into 45 squares. Store in the freezer in an airtight container. Enjoy!

Here’s an incredibly EASY way to cook up chicken breast in the slow cooker!
There are many ways to use the tender, salsa-flavored chicken breast...use it in tacos, in enchiladas, or on a sweet potato, on cauliflower rice, on salad, on quinoa, or even use it to fill an omelet!
SERVES 6
• 4 boneless, skinless chicken breasts
• Dash of salt and pepper
• 2 cups fresh salsa
• 1 lime, sliced into wedges for serving
DIRECTIONS
1 Place the chicken breasts in a slow cooker and season with salt and pepper. Top with the salsa, cover and cook on high for 4 hours or on low for 6-8 hours.
2 Shred the chicken and mix into the salsa juices. Serve with lime wedges. Enjoy in tacos, enchiladas, on salad or on sweet potato or on cauliflower rice or quinoa!

We think that Jack Johnson would approve of these fluffy banana pancakes...
So let’s pretend like it’s the weekend now and enjoy pancakes that are packed with protein and dotted with bananas.
What makes these pancakes healthier than traditional ones? These are gluten-free, low-sugar, and packed full of muscle-supporting protein. Top it off with some monk-fruit sweetened syrup and you’ve got yourself all the comfort and flavor of your favorite short stack without those pesky carbs and sugars. Enjoy!
SERVES 6
•1 cup of Walnuts
•1 cup Vanilla Protein Powder
•½ teaspoon baking soda
•1 teaspoon baking powder
•1 teaspoon sea salt
•2 teaspoons vanilla extract
•1 cup cottage cheese
•1 cup almond milk
•1 egg
•4 egg whites
•2 Bananas, sliced
•½ cup lily’s chocolate chips (stevia sweetened)
DIRECTIONS
1 Preheat your pancake griddle or large skillet over medium-high heat.
2 Combine all of the dry ingredients in a food processor. Pulse to combine until smooth.
3 Add the vanilla extract, cottage cheese, almond milk, and egg. Blend until smooth.
4 Use an electric mixer to beat the egg whites until stiff peaks form. Gently mix the egg whites into the batter.
5 Use a paper towel to carefully rub coconut oil on your preheated griddle or skillet. Reduce the heat to low. Use a ¼ cup to scoop the batter onto the griddle in nice big circles. Sprinkle with sliced bananas and chocolate chips. When bubbles form, flip the pancakes to cook on the other side. Cover when cooking the second side for about a minute to help cook the middle of the pancake.
6 Serve with chopped walnuts, chocolate chips and a drizzle of keto monk-fruit syrup. Enjoy!
