~CUCUMBER MINT & FETA SALAD~

Ingredients

1 large ripe cantaloupe
4 medium cucumbers (or 2 large ones)
1/2 tsp. salt
8 oz feta cheese, cubed or crumbled
About a dozen medium-sized mint leaves, very finely chopped

For the Honey-Lime Dressing:
-1/4 cup olive oil
-2 tbsp. white wine vinegar
-Juice of one lime
-2 tbsp. honey
Salt and pepper to taste

Directions

-Cut the cantaloupe in half and scoop out the seeds.
-With a melon baller, carve out as many balls as you can get out of your cantaloupe.
-Chop the cucumbers in thin, quartered slices.
-Place the cucumber slices and melon balls in a colander and sprinkle with 1/2 tsp salt, toss gently with your hands. -Place the colander over a bowl and allow the juices to drain for about 20 minutes. (Keep the juice for smoothies!)
-Place the cucumber and cantaloupe balls in a salad bowl. Add the cubed feta and chopped mint.
-Place all salad dressing ingredients in a lidded jar and shake vigorously.
-Pour on the salad, toss gently, and serve cold.

~GRAPEFRUIT FRESCA~

Need another refreshing tonic?
Grapefruit AND coconut water are both excellent and potent sources for re-hydration after a day out in the sun! Try this refreshing drink for a recharge!

-Star Ruby Grapefruit
-Ice
-Coconut Water
-Mint (optional)

Directions:
Cut grapefruit so you have only flesh segments left; discard rind and pith. For each drink, place 2 to 3 segments in a glass. Top with ice. Pour coconut water over ice. Garnish with mint sprigs.

~AVOCADO MAYONNAISE~

This delicate & creamy "mayo" is perfect for your sandwiches, chicken salad, and even as a veggie dip!
-->Share photos of you try it, we'd love to see it!

1 avocado (Hass Avos on sale through Monday! 3/$6!)
1/2 lemon (juice)
1/4 teaspoon salt (or to taste)
1 pinch cayenne pepper (optional)
1/4 cup extra virgin olive oil

-Cut avocado in half. Scoop out the flesh and put it into blender or food processor.

-Add lemon juice, salt, and cayenne pepper and blend together (be sure you taste it as you go!)

-With blender running, add olive oil *slowly*. You many have to stop the machine several times to redistribute ingredients and TASTE. Puree to a smooth creamy mixture.

Awesome lunch idea!

Avocado and Tomato Salad (SHARE to save on your wall)
4 cups avocados, diced medium
2 cups grape tomatoes or 2 cups cherry tomatoes
2 cups cucumbers, peeled and diced medium
1 cup red onion, diced small
4 tablespoons fresh cilantro, chopped
2 teaspoons fresh garlic, minced
2 tablespoons lime juice
1/4 cup olive oil
salt
fresh black pepper
Lettuce (if you want)
Toss all ingredients in a bowl and top on a bed of lettuce (if desired)
Makes 8 servings
Calories 201.9 Total Fat 17.9 g Sodium 10.2 mg Total Carbohydrate 11.6 g Dietary Fiber 5.8 g Sugars 1.8 g
