2 week dry aging update with a new special guest!!! I’m super happy with how things are progressing with the Pro40 unit. Things are looking really good so far and I just added another 14.5lbs to the party.

Beef Short ribs!!! (Sound on) Slapped some Costco choice Dino ribs on the Peak today. Just about 8hrs at 250 deg then another hour resting in the cooler. I’m not a big rib eater but man these could change my mind. It was a great day for hanging out by the smoker and taking it easy. Destroying the ribs at the end of the evening were the perfect closer. “Searin’ meat and drinkin’ neat” that extended shelf coming in real handy!

Tomahawk… 2lbs… smoked for 90 min then reverse seared at 500 deg. Finished off with some homemade garlic herb compound butter while it rested.
Some dirty sets rolling in off of Lake Erie during a winter storm today! I think I’ve seen bigger waves out here today than I’ve seen in San Diego for awhile.

First time doing a prime rib. It’s not my go to cut of meat but it’s something I’ve always wanted to do because I know others enjoy it. Smoked this 7lb’r for 5 hours at 225 deg. With a compound butter exterior. Then reverse seared at 500 deg. Came out a touch more done than I was shooting for but it was perfectly fine overall. Or at least everyone was full and happy which is always the goal.

Time for an upgrade!!! What’s better than being able to smoke meat? Smoking more meat at the same time!!! Total guilty pleasure buy. I didn’t need it but I wanted it. It’s a new Peak model. About 1/3 bigger than my previous green mountain with a few more bells and whistles. Now with my original smoker I have an extra smoker for side dishes or pizza oven. Ya know. For when I gotta feed a small army and all that.

First run at a pot roast! Took a 2-ish pound chuck roast. Smoked it for about 3 hours. And then tossed it in a pan with potatoes, mushrooms, little onions, a crap load of garlic (of course), carrots for color and a couple big sprigs of rosemary. Back into the smoker for another 3 hours or so. Turned out really good!!! The kid had a couple bites which is pretty much a win around these parts.
