This is Shon (no last name provided), who caught a nice 19-inch rainbow trout while fishing with guide Austin Kennedy on the Beaver Lake tailwater recently. Kennedy says the Army Corps of Engineers is releasing colder water through the system at Beaver Dam, and they’re working with AGFC biologists to closely monitor conditions throughout the tailwater. The colder releases have started bringing river temperature down into a healthier range for the fishery, Kennedy said, adding that fish should begin to reposition into their more traditional holding areas. It was a slow start for us. We had a pole bend at sunrise, but that fish spit the hook before we could even get to it. About an hour later, we had a striper hit our long line and got it in the box!
We were still marking fish on our graph after that but couldn't get them to react, so we decided to make a move. We scanned for an hour and a half until we marked fish again, dropped lines, and landed our second keeper about an hour later.
Then, the action picked up! We had a big fish grab our bait and stripped line out multiple times before it eventually shook the hook. As we were reeling that line back in to bait it, two hungry fish hit at once and bent two of our poles! About 30 minutes later, one last fish hammered our bait but spit the hook.
All in all, a solid day of grinding it out on the water!

Larb Beaver Lake Striped Bass
Larb Pla (often spelled larb, laab, or lap) is a vibrant, bold, and incredibly flavorful minced fish salad native to Laos and Isan (Northeastern Thailand).
If you've ever had the more common chicken or pork larb, this follows the same brilliant flavor profile: it's a perfect balance of smoky, sour, spicy, and salty, packed with fresh herbs.
What Makes It Special?
Unlike a standard western fish salad, larb pla isn't creamy. Instead, it relies on a specific combination of powerhouse ingredients that completely transform the fish:
The Fish: Traditionally, it's made with firm, white-fleshed freshwater fish (like catfish, tilapia, or snakehead). The fish is either finely minced and cooked, or grilled first to give it a rich, smoky depth before being flaked apart.
Khao Khouas (Toasted Rice Powder): This is the indispensable backbone of any larb. Raw sticky rice is dry-pan toasted until deep golden brown, then ground into a gritty powder. It gives the dish a unique nutty aroma and locks onto the juices.
The Dressing: A sharp dressing made from fresh lime juice, high-quality fish sauce, and dried red chili flakes.
The Fresh Herbs: It's loaded with massive handfuls of fresh mint, cilantro, culantro (sawtooth coriander), sliced shallots, and green onions.
How It's Typically Served
Larb is rarely eaten solo. Because the flavors are so punchy, it's meant to be eaten family-style with:
A basket of warm sticky rice (used to scoop up the fish).
A platter of raw vegetables like crisp cabbage wedges, long beans, and cucumber slices to cool down the heat.
It's an absolutely incredible way to prepare fresh-caught freshwater fish, especially if you enjoy a hit of bright citrus, fresh herbs, and a kick of chili heat.
