(Recipe of the Week) This thick, creamy smoothie is like having dessert for breakfast, but it's completely healthy! Made with just a few ingredients and ready in seconds, it's a filling, satisfying breakfast or snack.

Banana Nut Protein Smoothie

(adapted from:

1/2 frozen banana
3/4 cup unsweetened almond, coconut or cashew milk (non-dairy milk of choice)
1-2 tablespoons nut or seed butter of choice (such as almond butter or cashew butter)
1 scoop Coach Fuel Vanilla or Coach Fuel Vanilla DF (or high quality vanilla protein powder)
Cinnamon to taste - optional
Ice to desired thickness

Add all ingredients into the blender and blend until desired consistency. Top with cinnamon and enjoy.

Note: This dish is approved for the 30-Day Metabolic Comeback Challenge provided that Coach Fuel DF is used. If you do not have protein powder on hand, an additional 1/2 of a frozen banana can be added and ice reduced.

(Recipe of the Week) This warm, satisfying salad is the perfect mix of protein and veggies that makes for a perfect summer meal.

Salade Nicoise



1/2 large head of romaine lettuce, cut or torn into bite sized pieces.
3/4 pound small boiling potatoes (red bliss or Yukon gold) cut into 1/2 inch discs
1/2 medium red onion, sliced thin
2.5 ounces of Nicoise olives pitted (approximately 20 olives)
1/2 pound haricot vert or green beans
2 hard boiled eggs, sliced 1/4 inches thick
1 1/2 cups cherry tomatoes halved
1/4 cup of parsley, chopped coarse (optional garnish)
8 ounce jar of white tuna in olive oil

1 1/2 teaspoons red wine vinegar
1/4 cup extra virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon fresh thyme, finely chopped
1 tablespoon fresh tarragon, finely chopped
2 teaspoons fresh lemon juice
1/4 cup shallot, diced fine (brunoise)
salt and pepper to taste


Salad Preparation
Place potatoes in a pot of well-salted cold water, covering them with 2 inches of water, and place over high heat.
Bring water to a boil and cook potatoes until you can easily pierce them with a paring knife (about 25-30 minutes).
Bring another 3 to 4 quart pot of well-salted water to a boil. Once boiling, place green beans into the pot.
Cook green beans for 3 minutes and then strain in a colander.
Wash the lettuce and drain or dry with a salad spinner.
Place ingredients in prep bowls prior to assembly

Dressing Preparation
Pour vinegar into a large mixing bowl.
Slowly drizzle olive oil into the bowl while whisking to make an emulsion.
Add Dijon mustard, Shallot, Thyme, Tarragon and Lemon Juice and whisk thoroughly.

Pour half of the dressing into a large mixing bowl
Add the lettuce to the bowl and toss to thoroughly dress the greens.
Place the dressed lettuce in a bed on a large serving plate.
Assemble the ingredients in a sunburst pattern from the center of the plate.
Spoon the remaining dressing on top of the composed salad.
Optionally garnish with parsley.

Notes: Use sweet potatoes or omit white potatoes to make this dish approved for the 30-Day Metabolic Comeback Challenge.
You can cook the hard boiled eggs up to one week ahead.
You can cook the green beans and potatoes up to 3 days ahead. However, you may prefer to serve them warm.
Generously salt the water for cooking the potatoes and green beans. It should taste like sea water.

"6 years ago, at age 60, I was diagnosed with chronic inflammatory demyelinating polyneuropathy, same symptoms as MS but no brain lesions. The neurologist told me I would probably be in a wheelchair in the next 10 years. Last year it was getting more difficult to get out of chairs and walking was becoming difficult. I decided to push myself and slowly built to walking 2-3 miles a day.

A doctor recommended gastric bypass surgery saying a man at the age of 65 can’t get into shape. Winter months came and walking slowed down so some weight was coming back on. I saw an ad on Facebook about The Exercise Coach and decided to try it. It has been great and completely motivated me to get in the best shape I can to prove the doctors wrong. The staff here has been great motivators."

(Recipe of the Week) Fresh kale leaves are tossed with sweet crisp apples, nutritious quinoa, chewy dried cranberries, crunchy walnuts, tangy goat cheese and it’s finished with a bright vinaigrette.

Kale Salad with Apples and Quinoa



1/2 cup tricolor dry quinoa
6 cups slightly packed chopped kale (it will take about 1 1/2 bunches. Remove thick ribs before chopping, 6 oz chopped)
2 crisp sweet apples, cored and chopped* (I used gala apples)
1 cup walnuts, lightly toasted and roughly chopped
1/2 cup dried cranberries
4 oz goat cheese, crumbled

1/2 cup olive oil
1/4 cup fresh lemon juice
2 Tbsp honey
1 1/2 tsp dijon mustard
Salt to taste


Cook quinoa and cool: Cook quinoa according to directions on package and cool completely.
Whisk dressing ingredients: While quinoa is cooling, whisk together olive oil, lemon juice, honey, dijon and salt in a jar or bowl.
Pour 3/4 dressing over kale, chill: Add kale to a salad bowl, whisk dressing once more then pour 3/4 of the dressing over kale and toss until kale is evenly coated. Cover bowl and chill 15 minutes (adding the dressing and letting it rest helps soften kale a bit).
Toss in remaining mix-ins and dressing: Remove salad from refrigerator, add apples, quinoa, walnuts and cranberries. Pour remaining dressing over salad then toss. Add goat cheese and toss just lightly.
Serve or store covered in refrigerator for up to 4 hours.

"Yay! I had a check-up this week after finishing The Exercise Coach's 30 Day Metabolic Reset Challenge. My doctor loved my weight loss (down 30+ pounds since 6 months ago), but even better, she told me I could stop taking the statins! My cholesterol levels were great! Bad cholesterol way down; good cholesterol way up!

My blood pressure, which has usually been “normal,” is now “low normal.” She was very impressed with The Exercise Coach for getting me here.

I am definitely planning to stick with the 80/20 plan to keep those numbers working for me. I am also walking in addition to my regular Exercise Coach appointments, and I feel stronger than I have in 10 years.

(Recipe of the Week) Start your day with a nourishing mix of fiber, protein, and healthy fat. This smoothie is a tasty and healthy way to get your day off on the right foot.

Sweet Spiced Carrot Cake Smoothie

(adapted from:

1 scoop vanilla protein powder such as Coach Fuel
1 tablespoon almond butter
1 tablespoon flaxseeds
1 cup chopped raw carrots
1 ½ teaspoons ground cinnamon
1 to 2 cups unsweetened almond milk
1/2 cup frozen cauliflower rice (or 1/2 frozen banana)
a handful of spinach (optional)

Place all ingredients into a high-powered blender. Blend to desired consistency.
