History of Cao Lau

Cao lầu is one of the most iconic dishes of Hoi An, with a history dating back to the 17th century when Hội An was a major international trading port. The dish reflects a blend of Chinese, Japanese, and Vietnamese culinary influences created through centuries of cultural exchange.
Cao lầu is famous for its chewy noodles, traditionally made using local well water and rice ash, giving them their unique texture and color. Served with roasted pork, fresh herbs, crispy rice crackers, and a small amount of savory sauce, the dish captures the authentic taste and heritage of Hội An.
