Making a Long Billy (1) Here is a video showing Corn hardening a knife the old fashioned way. To get to this stage he has cut out and profiled the blade ready for hardening.

Today I thought long and hard about which knife to feature and chose the the Long Filleting Knife. This blade was designed to Fillet Niloticus - it has a beefy and slightly longer blade than most Filleting Knives. This is so that it can cut through the study ribs of the Niloticus. It is also used for Salmon and I have made even longer ones for Tuna!

In our home the Filleting Knife is in almost daily use for all sorts of kitchen tasks but we love to carve with it.

We can fit a lot of different handles to this design but my favourite is deadwood because of the density. Wild Olive is also a good option and the bone handle style looks beautiful too. The Long Filleting Knife sells for $275.

Today we are focusing on our blades which are used for gutting and skinning animals.

If you use a gut hook blade to unzip the stomach you avoid inadvertently damaging the intestines and leaking cavity fluids onto the meat. As you can imagine this would be very unpleasant.

Corn designed his hooks to be a part of the skinning knife and they are razor sharp. The blades also serve the purpose of being skinning knives as well general purpose all round camping tools. The prices for this style of knife is between US$250.00 and $325.00

Today I want to introduce you to our Paddaslaghter and his little brother the Herschel knife. The Paddaslaghter sells for $450.00 and the Herschel $325.00.

The Paddaslaghter was a design we bought as part of the job lot and this design amused us so much we named it ironically as the Paddaslaghter. We have sold many of these over the years but the one order I remember was from an American who was with the embassy in Harare. He was retiring and wanted a knife which would not only commemorate this but he also wanted to commemorate those other men in his family who had served their country. We ended up making 5 for the family.

The baby brother, the Herschel came about after a meeting with Lloyd Herschel who was working on a crocodile farm in the Victoria Falls. He saw the Paddaslaghter and said to Corn that he wanted a knife that he could defend himself with if the worst happened. The Herschel has been a hugely popular design

As always they come with a hand stitched leather sheath.

Hi all

We are often asked how the knifemaking began and that is a story on its own.

With a surname like Smit it is pretty obvious that blacksmithing is Corn's heritage. Blacksmithing goes back generations and is the reason the Smits came to this country.

In 1985, a year after we got married, Corn wanted to buy a hunting knife. We searched Harare and he could not find anything he liked. Well Corn being Corn decided that if he couldn't buy a knife he would make it. So the Smit Hunter and Smit Skinner were born. These are beautiful knives and are often bought as commemorative knives.

These ones sell for $325.00 each and you can choose whichever handle you like. They come standard with a leather sheath.

Many years ago when we had been making knives for about 5 years Corn received a phone call from a knifemaker called Bugs. He was giving up knifemaking and wanted to sell all his stocks. Amongst this treasure trove were 64 Billy blanks. Corn looked at these blanks and thought he would never sell them because they were just too small. Well all 64 were sold within two months and this remains one of our most popular designs. It's length is 16cm long. We sell this at US$225. This sets handles are bone and we have various handle options such as hardwood, bone and horn. This is an excellent gift - in our family we give it to the boys when they turn 16. The above set was ordered as groomsmens' gifts.
