Affirmation for today- Abundance is my natural state of being.
Find a quiet space, close your eyes, and start to connect to you breath. Repeat today’s affirmation in your head a few times then start to build your abundant life underneath your eyelids. Feel the wonderful emotions you want to feel, create & manifest your natural state of being. Abundance ❤️

Chocolate chip Cookies- refined sugar free
What you need:
1 cup oat flour - (i just blend whole oats)
1/2 cup whole oats
1/4 cup cocoa powder
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons cinnamon
1/2 teaspoon salt
4 tablespoons butter/coconut oil or ghee, melted ( used ghee)
1 teaspoon vanilla
1 large egg
1/2 cup honey
about 1/2 to 3/4 cup dark chocolate chips.
How:
Preheat oven to 325 degrees F.
1.Line a large baking sheet with parchment paper
2. Pull out 2 medium bowls, one for dry ingredients, one for wet.In one bowl, whisk together the oats, flour, baking powder, cinnamon, cocoa, and salt.
3. Melt the Ghee in the other bowl. You don't have to melt it all the way, if there are a couple lumps it's okay.Whisk in the vanilla, then the egg. Whisk in the honey.
4. Add the wet ingredients to the dry ingredients and use a wooden spoon to stir until it has just come together (don't overdo it).
5. then fold Chocolate chips into the dough.
6. Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes.Use your hands to shape the dough into roughly 15 cookies
7. Place on the prepared baking sheet Bake in the preheated oven for about 12-13 minutes, or until they have just started to brown on the edges.
8. Once you remove them from the oven.Let cool on the pan for a few minutes before removing to a cooling rack.

We had coconut veg curry with basmati rice the night before. So used my left over coconut milk & rice to make this delicious plant based rice pudding.
Ingredients:
1 can coconut milk
12 cardamom pods
1/2 tsp cinnamon
1/4 tsp vanilla extract
2 tbsp date paste (I softened 5 dates in hot water & blended with some of the milk)
1 1/2 cups cooked rice (I used basmati rice)
How to:
Place the coconut milk and cardamom pods in a small pot on medium-high heat.
Let bubble for one minute, then reduce heat to low and let simmer for 10 minutes to infuse the coconut milk with the cardamom.Using a spoon, remove the cardamom pods.
Add the cinnamon, vanilla extract and date paste and stir until combined.
Next, add the rice and let simmer on medium-low heat for 10 minutes until the rice becomes nice and creamy.
We topped ours with fresh mango and it was awesome, You can also top with fresh berries, shredded coconut or any other toppings you like.
I love not wasting food so this recipe/dish for me tasted even better as I didn’t throw away left overs. ❤️

Veggie Tacos
So simple!
If you are gluten free or avoiding gluten then any hard shell corn tacos are perfect for you. Please check the ingredient list of your brand.
Veg Mix ingredients
-tin of mixed beans
-tin of chopped tomatoes
-1 red pepper
-1 onion
-2 cloves garlic
-2 fresh red chilli
-coriander
-salt & pepper
Veg Mix Method:
Fry onion, chilli & garlic sweat it out. Salt, pepper, mix beans add to the mix, and cook off and a tin to tomatoes, bring to a simmer, add thin slices of pepper and add cook for 5 mins leaving the pepper al dente. Then with back of a fork, mash the beans to a consistency you like. Take off the heat add fresh coriander.
Then add you fav toppings, you don’t have to go crazy less can be more. We went for fresh homemade guacamole and chopped coz lettuce for crunch.
