Lunchbox win incoming 🤝 These pizza pinwheels are fun, cheesy, veggie-packed and way easier than they look. Perfect for kids, snacks, or even party plates.
Pizza Pinwheels
Serves 12 | Ready in 30 mins
Ingredients:
• 2 sheets puff pastry, defrosted
• ¼ cup pizza sauce
• 2 cups mixed vegetables (onion, spinach, capsicum, carrot, zucchini, mushrooms, pineapple, olives etc.)
• 1 cup cheese, shredded
• 100g bacon, diced
Method:
1. Preheat oven to 200°C (180°C fan-forced) and line a tray with baking paper.
2. Roll out puff pastry and spread evenly with pizza sauce.
3. Sprinkle over vegetables, cheese + bacon.
4. Roll tightly into a log from one long edge.
5. Slice into 1.5–2 cm pieces and place cut-side up on tray.
6. Bake for 15–20 mins until golden and puffed. Cool slightly, then serve.
Perfect for sneaking in extra veg without the complaints 🙃💛

Easy quesadilla for busy days 🌮✨
A quick lunch that keeps you full, helps you use up what’s already in the fridge, and the kids will love it too 🤍
The secret? Balance.
Protein + veggies + carbs = an easy meal that actually satisfies you.
Ingredients:
* 1 tortilla
* Leftover protein of your choice (chicken, beef, sausage, etc.)
* Veggies of your choice (we used tomato and capsicum)
* Cheese
* Optional toppings: avocado & Greek yogurt ✨
Steps:
* Add everything to one side of the tortilla
* Fold and cook in an air fryer or pan until crispy
* Top with avocado or Greek yogurt for extra protein and enjoy 🤍

Chocolate mug cake in under 2 minutes 🍫✨
Perfect for when you’re craving something sweet, but don’t want to make a whole dessert or spend forever in the kitchen.
Ingredients:
* 2 tbsp flour
* 1 tbsp cocoa powder
* 1 tsp baking powder
* A pinch of salt
* 1 tbsp maple syrup
* 1 tbsp protein Greek yogurt
* 2 tbsp milk
* A few chocolate chips (optional 👀)
* A dash of vanilla essence if you like a little extra flavour 🤍
Steps:
* Mix everything together in a microwave-safe mug
* Microwave for 30–60 seconds, depending on your microwave
* Enjoy warm and gooey ✨

Coconut Curry Baked Cod 🤍 A creamy, super cosy coconut curry fish. This one is peak cosy dinner energy 🤤✨ Light, fresh and packed with flavour... the kind of meal that feels a bit fancy but is secretly so easy.
Serves 4 | Ready in 40 mins
Ingredients:
• 4 cod fillets (150–180 g each)
• 2 tbsp yellow curry paste
• 3 cloves garlic, minced
• 2 tsp fresh ginger, grated
• 400 ml coconut milk
• 1 cup cherry tomatoes
• 2 heads bok choy, roughly chopped
• Juice of ½ lime
• Salt + pepper, to taste
• 1 cup uncooked jasmine rice
• Fresh coriander, roughly chopped
• Lime wedges
Method:
1. Cook rice according to packet instructions. Set aside and keep warm.
2. Preheat oven to 180°C (fan-forced).
3. In a bowl, whisk together curry paste, garlic, ginger + coconut milk.
4. Place cod in a baking dish. Add cherry tomatoes + bok choy.
5. Pour over the coconut curry sauce.
6. Bake for 30 mins, or until the fish is opaque and flakes easily.
7. Finish with lime juice, fresh coriander + serve with rice.
