1️⃣ IKIJIME – Dispatch the fish Locate the brain just behind and above the eye, then insert the spike firmly into the brain. Done correctly, the fish should immediately go limp.
2️⃣ BLEED YOUR CATCH Cut the gills or appropriate blood vessel and place the fish into clean seawater briefly to allow it to bleed out.
3️⃣ SHINKEI JIME – Destroy the spinal cord Insert the appropriate wire into the spinal canal and feed it along the backbone toward the tail. Work the wire back and forth to disrupt the spinal cord.
4️⃣ STRAIGHT ON ICE ❄️ Once dispatched and bled, get your fish properly chilled in an ice slurry or on ice.
