crispy, salty, sweet, with just enough heat to keep things interesting. two minutes of prep and you’ll wonder why you’ve been having plain eggs this whole time.

Chilli Honey Halloumi

ingredients-

40g halloumi, 1 tbsp extra virgin olive oil, 2 tsp honey, pinch of chilli flakes, pinch of salt and pepper. best served with toasted sourdough, avocado, eggs, and spinach.

method-

whisk together olive oil, honey, chilli flakes, salt and pepper. slice the halloumi into three pieces. add to a pan over medium heat with the chilli honey mixture, making sure it’s evenly coated. cook 3 minutes each side, or until golden and crispy. serve alongside your favourite cooked breakfast.

every time you show up to the plan you already committed to, even when you don’t feel like it, you’re not just getting a workout in. you’re proving to yourself that your word means something.

it’s such a small thing in the moment. nobody’s watching, nobody’s keeping score except you. but that’s exactly why it counts. the promises we keep when no one’s checking are the ones that actually build something.

Confidence.

that’s the whole goal this week. not a huge transformation, just small, kept promises, one class at a time. show up for the one in front of you, and let that be enough.

nobody builds a dream life in one big week and i wish someone had told me that sooner.

i used to think i had to choose between having fun now and building something later.
turns out that was never really the choice.

the actual choice is smaller and far less exciting than that. it’s whether you protect the ordinary stuff, the sleep, the money, the training session,
the hour you didn’t hand over to something that didn’t matter, on the days nobody’s watching and nothing feels urgent.

none of those choices look like much in the moment.

that’s exactly why most people skip them.

they’re chasing a result they can see today,
when the actual work is invisible for a long time before it isn’t.

i’d rather be the boring one.

the one who went to bed on time, who kept the boundary,
who left the money in the account, but who finds JOY in those moments.
because that boring version of me is the one building the life i actually want,
brick by unremarkable brick.

nobody gets there by accident.
and nobody gets there overnight 🤍

okay, we caved and made the viral chopped sandwich (respectfully, it’s a genuinely good sandwich).

roast chicken, sundried tomato, red onion, a slice of cheddar, all chopped together and stuffed into a baguette.

five minutes, zero cooking, protein, and flavour for days.

Viral Chopped Sandwich

ingredients-

¾ cup roast chicken breast, 3 small cos lettuce leaves, ¼ cup red onion, 1 slice cheddar cheese, 1.5 tbsp sun-dried tomatoes, 2 tsp mayonnaise, salt and pepper to taste, fresh baguette

method-

pile all the sandwich ingredients on top of each other and chop until evenly combined. gently pull the inside of the baguette out to make room for the filling. fill the baguette with the chopped mixture and enjoy.

decision fatigue is real. by the time you’ve decided what to eat, what to wear, what meeting to prioritise, there’s often nothing left for the thing that actually recharges you.

so this week, one decision has already been made for you. sculpt, circuit, pilates, and HIIT, planned and ready, so you don’t have to spend energy figuring out what to do, just show up and do it.

that’s one less thing pulling at your attention today.

there was a stretch of time where my version of self care was cancelling everything, turning my phone off, and “protecting my peace” (looking back, i was just burnt out and lighting a candle scented like ‘relax’ about it).

i used to think rest meant avoiding my life for a weekend. turns out that’s not rest, that’s just delayed exhaustion with better lighting.

here’s what actually changed things for me: i stopped waiting to feel like doing the workout, the home-cooked meal, the early night, the quiet ten minutes, and started doing them anyway. i kept the promises to myself that nobody was around to see me keep.

and the other half surprised me even more, letting myself actually feel things.

the angry days.
the flat days.
the joy-filled days.

not fixing them, not distracting from them, just letting them be part of the picture instead of something to get past.

self care was never a mood i was waiting to be in the right one for. it’s a habit, built whether i feel like it or not.
because (surprise!) showing up for yourself is the self care, my loves.

if you’re going to batch cook just one thing this week, dear lord let it be these turkey ricotta meatballs. freezer friendly, good over pasta or with veg, and it means tonight the answer is already sitting in the fridge instead of a decision i have to make at 6pm.

Turkey Ricotta Meatballs

Ingredients -

meatballs: 500g turkey mince, 80g wholemeal breadcrumbs, 2 tsp oregano, 30g grated parmesan, pinch of salt and pepper, 2 tbsp ricotta cheese, 1 egg.

sauce: 500g passata, 1 chicken stock cube, 1 red onion (sliced), 2 cloves garlic (diced), 4 button mushrooms (sliced), 2 tbsp balsamic vinegar, fresh basil (chopped). best served with pasta or mashed potato.

Method -

preheat oven to 200 degrees and line a baking tray. combine all meatball ingredients in a bowl and roll into balls. bake for 25-30 minutes until cooked through. meanwhile, caramelise red onion and garlic in a non-stick pan. add passata, stock cube and balsamic vinegar and mix well. add mushrooms and basil, allowing to simmer for a couple of minutes. add the cooked meatballs to the pan and cook for a further 5-8 minutes until heated through. season with salt and pepper and serve with your favourite pasta or mashed potato.

quick, easy nourish bowl for you my loves…because we aren’t doing complicated this week.

this one’s plant based, packed with protein from the tofu and quinoa, and finished with a satay sauce i could honestly drink.

Satay Tofu Nourish Bowl

Ingredients-
1 tbsp extra virgin olive oil, 2 tsp nutritional yeast, ½ tsp turmeric, good pinch of salt and pepper, 100g firm tofu (cubed), ½ cup tri colour quinoa (cooked), ½ cup pumpkin (roasted), 1 cup baby spinach (chopped), ½ cup cherry tomatoes (halved), ¼ avocado (sliced), fresh mint to top

satay sauce - 2 tsp natural peanut butter, 1 tsp ginger (minced), 2 tsp tamari, 1 tsp rice malt syrup, 1-2 tbsp water

Method-
prepare roast pumpkin by placing in the air fryer for 15 minutes, or oven for 20 minutes on 210 degrees. prepare quinoa by placing ¼ cup uncooked in 1 cup water over the stove, bring to a boil and simmer until absorbed and fluffy. heat olive oil in a non-stick pan, add tofu and toss through nutritional yeast, turmeric, salt and pepper until evenly coated. fry for 5-8 minutes until golden and crispy. to serve, place quinoa, tofu, pumpkin and remaining vegetables in the bowl, topping with avocado and mint. whisk together the satay sauce ingredients, adding water until smooth and drizzle-like. drizzle over the bowl and enjoy.

healthy eating should still include the foods you genuinely enjoy my chickens 🤍

i think sometimes we forget that balance is part of healthy eating too.

having something homemade on hand means you’ve always got an option when you’re craving something sweet.

no guilt, no overthinking

save this one for your next weekend bake 🤍

Ingredients -
1½ cups plain flour
½ cup raw sugar
⅓ cup cocoa powder
1 tsp baking powder
pinch of salt
1 cup milk of choice
⅓ cup butter, melted
1 egg
1 tsp vanilla
¾ cup frozen blueberries
⅔ cup white chocolate chips

Method -
preheat oven to 185°C and line a small loaf tin. combine the dry ingredients in one bowl and whisk the wet ingredients in another. fold the wet mixture into the dry until just combined. gently stir through the blueberries and white chocolate chips, saving a few to sprinkle over the top. pour into the loaf tin, top with the remaining blueberries and white chocolate chips, then bake for 55–60 minutes, or until a skewer comes out clean. allow to cool for 10 minutes before slicing and enjoying.
