was started by Nick Haddow, after he spent 10 years working with specialist cheese makers in many different countries around the world. He and his partner Leonie settled on Bruny Island in Southern Tasmania in 2001 to start making cheese for themselves. makes are very much the product of Nick's travels and training throughout the great cheese producing regions of France, Italy, Spain and the UK. They are the cheeses he loves to make and eat. Nick is a traditionalist, who recognises that great cheese was made for centuries before modern technology played a role and believes passionately in the old way of making and maturing cheese. For him, cheese making is a pursuit of integrity and flavour. use both cow's and goat's milk to make its range of cheeses. The animals are farmed in an environmentally sustainable way with the focus of the farming practices on producing the best milk possible. We believe profoundly that the milk is what makes the cheese and therefore the good treatment of animals and then their milk is paramount to us. Our Cellar Door is located at 1807 Main Rd, Great Bay, Bruny Island. We would love you to come and visit us on Bruny Island for an authentic Cellar Door experience. Come in for a free sampling of our cheese and beers, watch us make cheese and have a chat with the cheese makers and brewer. For those who want to stay a little longer and get to know us better, we also offer a selected dine-in menu that showcases what we do best. Sit under the eucalypts and enjoy a cheese platter or a long, lazy lunch. We are open from 10am until 4pm every day, with the kitchen operating until 3pm.

ODO stands for One Day Old.

Twenty-four hours of maturation, minimal rennet, and the rest comes down to the quality of the milk. The result is a crumbly, fresh curd cheese with a strong lactic tang, marinated in olive and canola oil with chives, chilli, garlic and black peppercorns.

It works on good bread with olive oil, through hot pasta or on a pizza straight off the grill.

In 2023, Bruny Island Cheese Co. turned twenty. We brewed this to mark it.

XX is a saison made with Tasmanian wheat, rye and a French farmhouse yeast strain. It pours hazy and pale, with stone fruit, spice and a dry finish. 5.2% ABV.

It pairs well with Raw George. The acidity and funk of the cheese works well against the fruitiness of the saison.

Otto is a fresh cheese wrapped in locally made prosciutto. Fifteen minutes in a hot oven and the prosciutto crisps up around the outside while the cheese softens inside.

It’s part of the Farmer Cheese Platter at the Cellar Door, served warm with three condiments and bread. Subject to availability.

Saint takes its name and its character from a cheesemaking tradition in the central plateau of France, where soft, surface-ripened cheeses have been named after local saints for centuries.

The rind is a light natural bloom, not the thick single-strain mould you find on commercial cheeses. Inside, the texture depends on when you open it: firm and delicate when young, oozy and more pungent as the curd breaks down.

Both versions are worth trying.
